A simple warm zucchini salad that’s bursting with flavours and textures. The zucchini slices are first charred grilled, then dressed in a lemon dill vinaigrette. Red currants offer a tart and sparkling flavour that works beautifully with mellow zucchini. Plus, they add a pop of bright, glossy red to the salad. If desired, add some toasted nuts or seeds for the crunch. Enjoy them as is, with some roasted chicken or steak, or serve over a bed of hummus or Greek yoghurt.

- 800 g Zucchini (I used yellow one)
- Sea salt
- Chicken schmalz
- 3 tbsp Olive oil
- 4 Garlic cloves, finely chopped
- 1 Green chilli pepper, sliced
- Juice of ½ lemon
- 2 tbsp Dill, chopped
- Red currants

- Cut zucchini into 1.5 cm-thick slices and season both sides with salt. Place the salted zucchini slices on a tea towel in a single layer to drain for about 30 minutes. Blot dry the zucchini with paper towels.
- Heat some chicken schmaltz in a grill pan or frying pan and fry the zucchini slices, in batches, over a medium heat for 5 minutes each side until lightly charred and just tender. Transfer to a large platter.
- In the same pan, add olive oil, garlic cloves, and chilli. Fry gently over a medium heat for 2–3 minutes, until it smells fragrant. Remove and mix in lemon juice and chopped dill. Pour the dressing over the warm zucchini and garnish with red currants. Serve them over a bed of hummus or Greek yoghurt.

Lovely salad, something different to do for zucchini
The reason why my posts don't appear in your reader is probably because I already published many posts a few years ago but I didn't contact other bloggers so the texts were on the blog without comments, now that we have Google Translate I can read blogs of all bloggers around the world and write comments.
