Belgian Endive and Pomegranate Salad

Looking for a healthy recipe idea with lots of bitter compounds? This Belgian endive and pomegranate salad is a true celebration of flavours and textures. The bitterness of the Belgian endive is perfectly balanced by the sweet and sour pomegranate seeds, and crispy bacon adds a great texture and depth of flavour, making this dish an elegant and refreshing experience.
Belgian endive, aka witloof (meaning ‘white leaf'), sometimes referred to as ‘white gold', leads a shadowy existence, in the truest sense of the word. On the one hand, Belgian endive grows in the dark to control its colour and to achieve the desirable flavour, and on the other hand, it is often overlooked in the vegetable section. Yet it is a wonderful winter vegetable that can be prepared in many different ways and is very healthy. Endive is nutritious and rich in fiber. It is a good source of potassium and calcium and vitamins A, B, C and E, and very low in calories.

 
Dressing
  • 3-4 head Belgian endive
  • Sea salt
  • Freshly milled black pepper
  • 1 tbsp Olive oil
  • 100 g Bacon
  • 1 tbsp Parsley, chopped
  • 80 g Pomegranate seeds
  • 5 tbsp Extra virgin olive oil
  • 2 tbsp Apple cider vinegar
  • 1 tsp Wholegrain mustard
  • 1 tsp Honey
  • Sea salt
  • Freshly milled black pepper
  1. Clean and wash the endive and cut each in half lengthwise. Season with sea salt and pepper. Heat 1 tablespoon of oil in a grill pan and grill the endive halves on both sides for 3-5 minutes over medium heat.
  2. Meanwhile, lay the bacon in a cold skillet, then turn the heat to medium. Cook until crispy, about 6-8 minutes. Then drain on kitchen paper.
  3. For the dressing, whisk together the olive oil, vinegar, mustard, honey, salt and pepper.
  4. Arrange the endive halves on a platter, pour the dressing over and sprinkle with the chopped parsley, pomegranate seeds and break the bacon over.

Belgium endive always makes for.a beautiful Salad. I like the way you serve this. BTW I know very little about cholesterol. My HDL is high and my tryglicerides are slightly about 150

Suelo consumir endivia con asiduidad, me encanta en ensalada pero también asada como la has preparado. Junto a ese aliño, el tocino y la granada, me parece una ensalada ideal.

I believe endive is good for gall and gallbladder because it has bitterish flavour.
