Crispy Baked Chicken Drumsticks

These crispy baked drumsticks are a simple and stress-free main dish recipe that you could cook in one big tray, making cleanup a breeze. Simply coat the drumsticks with olive oil and everyday pantry spices, then let the oven do all the work until browned and tender. They are very budget-friendly, reliably delicious with very little effort. Enjoy them with a side salad or roasted vegetables for an easy weeknight dinner. Change the flavourings as you like, some premade spice blends, like Chinese 5-spice powder, ras el hanout or garam masala work beautifully for the recipe.

 
Hummus Dressing
  • 2 ½ tsp Smoked paprika 
  • 2 tsp Onion powder
  • 1 tsp Garlic powder
  • ¼ tsp Cayenne pepper
  • ¾ tsp Fine sea salt
  • ½ tsp Freshly milled black pepper
  • 10 Chicken drumsticks
  • 3 tbsp Olive oil
  • Chopped fresh parsley, to garnish
  • Lemon slices, to garnish
  1. Preheat the oven to 210C/420F. In a small bowl, mix together the paprika, onion powder, garlic powder, salt and pepper.
  2. Pat the drumsticks dry with a paper towel and place them in a large baking tray. Drizzle the drumsticks with the olive oil and toss to coat, then sprinkle with the spice mixture and toss again until well-coated.
  3. Arrange the drumsticks, evenly spaced, on the tray. Bake for 40-45 minutes until the drumsticks are browned and cooked through or they reach an internal temperature of 74C/165F – 79C/175F, flipping the drumsticks once half-way through.
  4. Garnish with chopped parsley and lemon slices. Serve hot or warm. Store leftovers in a sealed container in the refrigerator for up to 3 days. To reheat, bake at 180C/350F, loosely wrapped in foil, for about 20 minutes, until heated through. To recrisp the skin, adjust heat to 220C/430F, unwrap the foil and cook for 5 minutes more.
