Seedy Apple Rings

Here’s a super simple, energising and satisfying snack that everyone, including kids, would love! It can be made in just a few minutes for when you need to grab and go. A jazzed up version of apple rings with peanut butter--slathering a slice of a tart apple ring with pure pistachio butter, sprinkling it with salt flakes, then topping it with a variety of healthy seeds and nuts results in the best crunchy-creamy, fulfilling breakfast or afternoon pick-me-up. I used Braeburn, but honeycrispy, granny smith or pink lady are equally great.

 
  • 2 Apples, cored and sliced horizontally into ¼-inch-thick rings
  • Pure 100% pistachio butter (or tahini or almond butter)
  • Maldon salt flakes
  • Sunflower seeds
  • Hemp hearts
  • Black sesame seeds
  • Poppy seeds
  • Chopped pistachios
  • Sliced hazelnus
  1. Using an apple corer remove the core of each apple and slice them horizontally into 1/4-inch thick slices, resulting 8-10 rings. If you don't have an apple corer, you can cut the apple into slices, then cut a hole in the middle to create the ring.
  2. Spread a thin layer of the pistachio butter on the apple rings. Sprinkle them with just a touch of sea salt flakes, then top with the seeds. You can either arrange the seeds in lines or mix all the seeds together and scatter over the nut butter.
