Don’t miss this moist Danish coffee cake if you love cinnamon and enjoy gooey, sticky caramelized treats. Brunsviger in the shape of a man or woman is typically decorated with icing and candy for birthday celebrations, and baked in a square or round pan, it’s also perfect for Sunday breakfast, as a thank-you gift or as an accompaniment to afternoon tea and coffee. Easy to make and simply delicious. When making indentations for the caramel topping, make them deep, but don’t break through the bottom of the dough.
Brunsviger, popular throughout Denmark, was originally baked without cinnamon. When it was first mentioned in the “Ordbog over det danske Sprog”, a dictionary of the Danish language in the 1930s, the cake was described as a yeast dough cake with a brown sugar and butter topping. Since then, however, the cinnamon version has become particularly well-known and popular.
“Brunsviger” has no direct English translation as it’s believed to be named after the German city “Braunschweig”, a city in central Germany or “Brunsvig” in Danish. The Danish historian and former museum director at Copenhagen City Museum, Bi Skaarup found out from old recipe books that a “Braunschweiger Dickkuchen” (another name for yeast cake) was widespread in Germany in the 19th century and resembles the Danish Brunsviger so much that it must be the same delicious pastry. Another tale goes back to a time where German workers in a small Danish town, brought with them a simple yet delicious idea: bread topped with sugar and butter, baked to crispy, sweet, buttery perfection!

Tikka Chicken Wings with Seeded Topping and Saffron Yoghurt

Marinate chicken wings in tikka masala overnight then roasted in the oven the next day and served over a bed of thick saffron yoghurt and some crunchy seeds. They are truly the flavour bombs. The chiken needs to be roasted on a lower heat to prevent the spicy crust burning before the chicken is fully cooked through. The yoghurt needs to be started one day ahead and the chicken is also best left in the marinade overnight or at least 4 hours. If you want to use chiken thighs or drumsticks, then adjust the cooking time accordingly.

This kohlrabi salad is really easy and quick to make and it makes a great change to the carb-loaded potato salad for grill. Kohlrabi, aka Kohlrübe, is a typical German vegetable, because nowhere else in the world consume such a large quantity of this root vegetable as in Germany. You can either peel and dice the kohlrabi before cooking, or boil them whole for 20 minutes to preserves valuable nutrients, then peel and dice. If you can't find kohlrabi, try using other root vegetables like turnips, parsnips or rutabaga. Dill can be substituted with flat parsley.

Agedashi meaning “fried and soaked in dashi stock” is a traditional and delicious Japanese favorite. Dashi powder can be easily found online (got mine from Amazon) or in Asian grocery stores. Or substitute it with chicken stock. Sprinkle with bonito flakes instead of sesame seeds if you can find some.

The large Argentine red prawns are naturally sweet, succulent, and juicy that you don’t need tons of seasonings except garlic, butter and a tiny bit of sea salt. Prawns with shell on are for sure more flavourful, but can be difficult and messy to eat, esp. with sauce. So, the choice is yours. Either you leave the shell on or not, just don’t skip the deveining step. The black vein running along the back of prawn isn’t harmful, but it tastes bitter and looks unappetizing. Don’t over cook them, or else the meat turns rubbery. Get some homemade bread to mop up that sauce if you ain’t on keto.

Tonnato is a rich Italian velvety tuna sauce that is traditionally poured over finely sliced, lightly poached or roasted veal (Vitello Tonnato). Here I am using white asparagus instead. It’s gluten free, keto-friendly and so delicious! There are many versions of this classic condiment, with fresh egg yolks, hard-boiled eggs, no eggs, with mayonnaise, yoghurt or sour cream. Pick what you like the most.
Caperberries are not the same thing as capers. They are the berries that develop after the caper buds have bloomed. Caperberries are much larger, about the size of a cocktail olive, and make good substitutes for green olives. Caperberies are pickled with their stems on, and have a milder taste and crunchier texture.

This cornbread is a perfect harmony of sweet, spicy, tangy, and earthy, making it an ideal accompaniment for stews and soups, grilled meat or salads. I have used jalapeño and Gruyère, but other chilli peppers and cheeses would work just as fine. If you prefer it extra spicy, just leave the jalapeños seeds in. The cornbread is delicious on its own, with some butter or honey lime glaze. It is completely optional, but I strongly recommend it as it adds a tangy sweetness and zesty kick that elevate the flavours to a whole new level and take your mood on a delightful turn! Leftovers can be frozen, or cut them into cubes to make croutons for soups and salads.
