Low Carb Bread with Cottage Cheese and Hemp Seeds

Healthier bread with less flour (esp. modern wheat) and more protein can now also be found on the supermarket shelves and bakeries. But nothing beats homemade bread, which is best enjoyed warm from the oven. This low-carb bread with cottage cheese is not only full of healthy nutrients, but is also incredibly tasty. The special thing about this bread is that it is not only low in carbohydrates, but also very high in protein thanks to cottage cheese. But hemp seeds are also a true nutritional wonder with healthy fats, including omega-3 and omega-6 fatty acids, and even have an impressive 31 grams of protein per 100 grams. They also add an intense nutty flavour to the bread.

 
  • 300 g Cottage cheese
  • 3 Eggs, medium
  • 100 g Flaxseeds
  • 10 g Coriander seeds
  • 75 g Almond flour
  • 60 g Psyllium powder
  • 50 g Hemp hearts
  • 3/4 tsp Salt
  • 1 packet / 20 g Cream of tartar
  1. Preheat the oven to 180C/350F and place a small casserole dish with water in the oven. Puree the cream cheese and eggs in a large bowl with a hand blender until smooth.
  2. Crush the flaxseeds and coriander seeds with a mortar and pestle or in a blender. Mix with the remaining dry ingredients and stir everything into the egg mixture and set aside for 10 minutes.
  3. Line a 20x10cm small loaf tin with baking paper, lightly grease and optionally sprinkle with more nuts or seeds for the crust.
  4. Scrape the mixture into the baking pan, smooth it out. Bake in the oven for 55-60 minutes until golden brown. Halfway through the baking time, turn the baking pan once so that the bread bakes evenly in the oven.
  5. Turn off the oven and leave the bread to rest in the oven for 15 minutes with the oven door slightly ajar. Then remove, leave to cool before slicing.

Looks very pretty, cottage cheese seems to be the current hit among the baking bloggers and tubers. I do not use it myself, but it can usually be replaced by some yogurt or buttermilk. I make flax savoury muffins two times a week.
