Cinnamon Hazelnut Biscuits - Gluten, Grain, Dairy, Sugar, Fat, Egg Free

These Christmasy cinnamon biscuits are made with roasted hazelnuts and without any flour, fat, dairy or eggs. They are subtly sweet and nutty with wonderful hints of vanilla and cinnamon and iced with a tangy lemon drizzle. Simply delicious with coffee and they smell wonderful! To make them even less guilty, I replaced icing sugar with powdered erythritol.

  • 200 g Roasted hazelnuts, ground
  • 100 g Erythritol, ground into powder (or use icing sugar)
  • 1 tsp Pure vanilla powder
  • 1 pinch Salt
  • 2 tbsp Water
  • 1 tbsp Freshly squeezed lemon juice
  • 1 tsp Cinnamon powder
  • Powdered erythritol (or icing sugar)
  • 1/2 tbsp Freshly squeezed lemon juice
  • 1 tsp Water
  • 2 tbsp Pistachios, chopped
  1. Line a large baking tray with baking paper. Preheat the oven to 180C/350F.
  2. Place all the dough ingredients in a mixing bowl. Use a hand mixer (or simply use your hands) to mix everything together.
  3. Dust your work surface with a little icing sugar and roll out the dough to a thickness of just under 1 cm. Using a knife, first cut the dough into strips about 2.5 cm wide and then cut them into diamonds, rounds or squares.
  4. Place the biscuits on the prepared tray and bake in the middle of hot oven for 10 minutes until golden. Remove and place it on a wire rack to cool briefly.
  5. Mix the icing sugar with the lemon juice and water to make a thick icing. Brush the biscuits with the icing and sprinkle some chopped pistachios over.

Very interesting, so it is just hazelnuts and water and nothing else. I do love recipes free from everything LOL And nice decoration too.
