Burrata Salad with Figs and Pomegranate

With fresh figs, pomegrante arils, and an easy white wine vinaigrette, this creamy burrata salad is fresh, delicious, and easy to make. If you can't find burrata, use buffalo mozzarella instead. Add in some toasted or candied nuts and salted Prosciutto for extra crunch and flavour. Served as both an appetizer or side dish with some croutons or crusty bread.

 

Burrata Salad with Figs and Pomegranate

White Wine Vinaigrette
  • 3 Burrata (50 grams each), drained
  • 2 Burrata (100 grams each), drained
  • 8-10 Small figs, halved lengthways
  • 1 Small pomegranate, arils removed
  • Fresh dills, to serve (basil and mint are great too)
  • 2 tbsp White wine vinegar
  • 1 tbsp Lemon juice
  • 1 tbsp Maple syrup
  • 2 Garlic cloves, finely minced
  • 90 ml Extra-virgin olive oil
  1. To make the vinaigrette, place all ingredients in a bowl, season with salt and freshly milled black pepper. Whisk to combine.
  2. Arrange burrata and figs on a serving platter. Scatter with pomegranate arils and dill. Season to taste, and drizzle over vinaigrette to serve.

Figs are always so gorgeous! I am currently translating a novel about a kitchen witch and it is filled with all kinds of cakes and pastries as she puts magic into the cakes that she serves to her customers, very cosy and Autumn set, the publisher said you are the best in the country for that genre with cakes and cooking :)

Angie, Very pretty but not really my thing. I do like figs though. You'd suggested I try Middle Eastern food. The closest I've come to that is Greek and gyros or shawarma plus some seafood dishes and Greek chicken. Kebabs are OK as long as they don't include sweet peppers. Don't care for olives and a little hummus goes a long way. Take Care, Big Daddy Dave
