Spinach Salad with Dates, Pecans and Sumac Croutons

This salad is jam packed with healthy ingredients. With plenty of nutrient rich pecans and dates this salad will help you maintain your energy throughout the day. If you can, opt for homemade sourdough bread or wholegrain bread. Use any other greens that you prefer other than spinach. Add some boiled eggs and/or bacon for extra protein if desired.

 
  • 1 Red onion, peeled, halved and thinly sliced
  • 125 g Dates
  • 80 ml Red wine vinegar
  • 120 g Bread of your choice
  • 100 g Pecans, roughly chopped
  • 80 g Butter
  • 4 tbsp Olive oil
  • 2 tsp Sumac
  • 1/2 tsp Pul biber (Turkish chilli flakes)
  • 1/4 tsp Salt
  • 1 tbsp Mint leaves, finely chopped
  • 150 g Baby spinach
  • 1 tbsp Freshly squeezed lemon juice
  • Lemon wedges, optional
  1. Peel and half the onion, then cut each half into thin slices. Cut the dates into 2 cm pieces. Mix both with red wine vinegar and leave to infuse for 30 minutes. Drain.
  2. Cut the bread into cubes. Roughly chop the pecans. Heat the butter and half of the olive oil in a pan and toast the bread pieces until golden brown. Towards the end of the cooking time, mix in the nuts and toast briefly. Transfer the mixture into a bowl and stir in the sumac, pul biber chilli flakes, salt and mint leaves. Set aside.
  3. Wash and drain the spinach. Place the spinach in a bowl and toss well with the onions, dates, lemon juice, a pinch of salt, pepper, and remaining olive oil. Top the salad with the bread mixture. Garnish with lemon wedges and enjoy!

I've never tried sumac in food. Is it spicy? This salad looks delicious though. Dates are never a bad thing to add to food either.

Nice colour combo! We have not had spinach at all at our greenmarkets due to too hot summer which continues into freaking September as well, it is constantly around 40C.
