These vegetarian patties are chewy, nutty and so flavourful. You could put them in wraps / pita pockets, or as topping for salads. Bulgur is cracked wheat berries that have been partially cooked and then dried. This whole grain is nutty and rich in fiber, it cooks fast and is used a lot in Mediterranean cuisine.

- To make the bulgur patties, bring the broth in a large pot to the boil and stir in the bulgur. Simmer the bulgur for 2-3 minutes, remove from the heat, cover and leave to soak for 30 minutes. Drain the excess liquid. Stir the eggs and starch into the bulgur mixture. Season with cumin powder, pul biber, salt and pepper.
- Shape the bulgur mixture into 16-20 patties. Heat the ghee or olive oil in a skillet over medium-high heat.
- Cook the patties 8 to 10 minutes, turning frequently, until crispy and light brown. Remove with a slotted spoon and drain on kitchen paper.
- For the dip, peel and finely chop the garlic. Mix the sour cream, Greek yoghurt with the garlic, lemon juice and parsley. Taste and season with salt and pepper.
- Arrange the patties on a bed of salad greens, sprinkle chopped parsley and pomegranate seeds over. Serve with the garlic dip.

Patties are always such a comfort food
Your patties are cute...it's nice to combine with Greek Yoghurt
The patties look delicious, thanks for sharing.
Take care, have a wonderful day and a happy weekend!
Gosh, this would be a wonderful appetizer. Delicious and very pretty! I also meant to say before now, how much I enjoy your crockery. Thanks Angie, have a great weekend!
Those look so wonderful, I'll have a plate full please!
I tried them a few years ago and liked them. I'll have to try this recipe.
Hi Angie, I've never tried Bulgar in any format. I'd try it with that garlic sauce but I'd prefer meatballs...be they beef, pork, lamb or a combination of meats. Take Care, Big Daddy Dave
They look terrific. For some reason they remind me of falafel.
These patties look so comforting and tasteful!
Se ven muy ricas. Gracias por la receta. Tomó nota. Te mando un beso.
Gracias Angie! Otra delicadeza y diferente propuesta a lo acostumbrado en mi país. Ignoro si existe aquí ese producto.
Te deseo un bonito fin de semana! Mi recuerdo siempre!
Va mi abrazo!
I'd have these in wraps for my lunch. Lovely!
Something different I guess, but still love meat ones.
I like the sound of that garlic dip! And the blue-green bowl is so pretty.
These vaguely remind me of Hush puppies, something that is big in the southern US. They look yummy!
I don't like bulgur.
saranno buonissime!
Se ven deliciosas.
Buen fin de semana.
Un abrazo.
These look so good!

I love these patties — and can easily adjust the sauce to avoid garlic. Nice recipe.
I love how versatile these are, whether stuffed in wraps or served on salads. This is definitely a recipe I'll be trying out soon
