Beer Battered Garlic Cloves

These pub-worthy, beer-battered garlic cloves are flavourful, crispy and pair perfectly with spicy sriracha, and make a delicious appetizer. Besides sriracha chilli sauce, aioli, ranch or even a spicy mayonnaise are perfect with battered garlic. The beer batter is great for seafood, vegetables and chicken too.

 
Beer Batter
  • 40 Large garlic cloves, peeled
  • 1l Water
  • 1 tsp Sea salt
  • 1 kg Lard or oil for frying
  • Flat parsley and chilli pepper to garnish
  • Sriracha sauce to serve
  • 120 g Plain flour
  • 30 g Cornstarch
  • 1 tsp Baking soda
  • 1 tsp Cayenne powder
  • 1/2 tsp Cumin powder
  • Salt and pepper to taste
  • 1 Egg, medium
  • 180 ml Cold beer
  1. Separate the garlic cloves, peel and trim. Fill a saucepan with 1 liter of water. Bring it to a boil, then stir in about 1 teaspoon of sea salt. Add in prepared garlic cloves. Boil for 5 minutes or until they are tender. Drain and leave to cool.
  2. Mix flour, cornstarch, baking soda, cayenne, cumin, salt and pepper together in large bowl. In another bowl, whisk together the egg and beer.
  3. Pour the beer mixture into flour ingredients bowl and stir until well blended. Chill for 30 to 45 minutes.
  4. Heat the lard in a deep skillet. Drop the garlic cloves into the batter so that they are thoroughly coated.
  5. Gently lower the battered cloves into the skillet and fry until golden brown, turning them if necessary so that both sides are equally browned. Remove and drain on paper towel. Garnish with chopped parsley, chilli pepper and serve with chilli sauce.

What a highly unusual and original recipe! I've breaded all kinds of things, including pickles and pumpkin flowers, but never garlic! Hope it does not burn the tongue!

Your beer battered garlic cloves look so tempting and crunchy! "Pubworthy" is the perfect description. I love anything beer battered, but have never made a beer batter at home. I'd have a hard time choosing which sauce to dip these beauties in.

Angie, This is a new food treat for us... We love garlic but the restaurants around East Tennessee state that certain dishes have garlic...but they must just pass the garlic cloves over the dish because the flavor isn't detectable. I would think that the elephant garlic would work best as a breaded and fried appetizer... Yum! Take Care, Big Daddy Dave
