Brussels Sprout Salad with Carrots and Macadamia Nuts

Making a Brussels sprouts salad doesn't actually require much preparation. You can use a food processor to chop the sprouts and grate the carrots, which will require just 5 minutes. The longer you let it chill in the fridge, the more tender the sprouts will be. Toss with tender carrot tops or other herbs (cilantro, parsley, spring onions are all good) and toasted nuts before serving.

SaladDressing
  • 450 g Brussels sprouts, trimmed, halved and thinly sliced
  • 200 g Carrots, peeled and roughly grated
  • 3 tbsp Carrot tops, chopped
  • 80 g Macadamia nuts, toasted
  • 60 ml Extra-virgin olive oil
  • 3 tbsp Apple cider vinegar
  • 3 tbsp Honey
  • 3 tbsp Maggi sauce or soya sauce
  • 1/4 tsp Salt
  1. Place all the ingredients for the dressing in a bowl. Whisk everything together until well combined.
  2. Place Brussels sprouts, and grated carrots in a large bowl. Toss with dressing. Refrigerate, covered, at least 1 hour. Stir in chopped carrot tops and chopped macadamia nuts just before serving.

Absolutely love Brussels sprouts - one of few vegetables to have their own 'real' taste but normally they have not been part of my salads . . . great to have a recipe to follow !

Lots of nice textures there with the Macadamia nuts, etc. That's a great idea using carrot tops (never done that before), but I think I'd like to first roast my Brussels Sprouts before putting them in the salad!

We both love brussels sprouts, and although we both also enjoy al dente vegetables, I think I might have to disguise them pretty well if I was serving them raw for hubbie! I imagine they taste a bit like raw cabbage though, so maybe not too much of an issue!

I would never have thought about adding the macadamias and the flavours in that dressing are to die for as well!

I did not know that sprouts can be eaten fresh, they give me tummyache even when cooked, but I used to love them in winter sooooo much in soups or roasted in the oven with potatoes. I do ever so miss those stinky little bastards.

Angie, If only I could eat greens. Love Brussels sprouts! With Afib, these, lettuce, broccoli and the like are all off the menu unless I partake regularly which isn't really practical...too much waste. Take Care, Big Daddy Dave
