Quark is a fresh cheese of East European origin. It is soft, white and un-aged similar to fromage frais. It is not the same thing as cream cheese or cottage cheese. Quark is often used in sandwiches, salads, and cheesecake in Germany.

- Beat sugar and butter until you until you've got a smooth mixture. Beat in egg yolks until creamy and smooth. Add in quark and lemon juice and stir until well-combined.
- Mix semolina, baking powder and baking soda and add to the butter-quark mixture. Whip the egg whites until they are stiff. Fold into the batter. Carefully add in mango.
- Spread the batter into an 8-9 inch greased baking tin and sprinkle almonds on top. Bake at 190C/375F for about 45 minutes.

I've always wanted to try quark, but can't find it around here. The cakes looks delicious! I would never have thought to use semolina to make a cake.
This cake sounds very good, although we've never seen quark before. Looks sweet and light though. Yum.
I've made a cake with only semolina before- the quark and mangoes will definitely add to the flavor.

I've never tried this quark cheese before, Angie. I bet it's really delicious with the mango and almond flavors. I wish I could taste a slice! Looks lovely. And funny you should ask about Moon - he did lose weight - the Dr. said he was getting too fat! All he wants to do is eat!

@Palidor: The one I used here is low fat, if you prefer a richer flavour, then the one with 40% fat content would be better.

Good to know abt quark cheese. Don't think I can get it here in S'pore though. I love cakes with semolina as I love that grainy texture eating it. Mango adds flavor, aroma & sweetness. This is a really nice cake recipe, Angie!
That's such a lovely and simple recipe. Luckily, i can get quark cheese here in Italy (we have the Lidl chain stores around). I guess it would be good with similar fruit, too.

I have never eaten quark before but from the description it reminds me of Greek anthotyro, which we use in cakes. Must be great with the addition of mango.

I love quark cake every since I have tried it in Holland. Mango + quark for the win!! I still can't find quark in Australia. Hopefully it will be easily available soon and I will defintely try my hands on this cake.
