Kohlrabi Fries

These kohlrabi fries, just like the potato version, go perfectly with burgers, steaks and schnitzel. However, there is one thing you should know before you go buy some kohlrabis. The homemade kohlrabi fries are not quite as crispy as conventional chips. However, they still have a great flavour, which is why you should definitely give them a try. Also because kohlrabi is really healthy. It is bursting with folic acid and vitamin C and also provides us with calcium, potassium, magnesium and iron.
With 6 grams of total carbohydrates per 100 grams, the kohlrabi is another cruciferous vegetable that you can include in your low-carb diet. Compared to many other low-carb vegetables, kohlrabi is particularly high in fibre, so it makes every meal more filling.

 
FriesRanch Dressing
  • 2 Kohlrabis
  • 2 tbsp Chicken schmaltz or olive oil
  • 1/2 tsp Hot paprika powder
  • 1/2 tsp Garlic powder
  • 1 tsp Finely chopped rosemary
  • Sea salt
  • 80 ml Buttermilk
  • 3-4 tbsp Mayonnaise
  • 1 tbsp White wine vinegar
  • 1 Shallot, very finely chopped
  • 1 clove Garlic, minced
  • 1 tbsp Dill, chopped
  1. Whisk the buttermilk, mayonnaise, and vinegar together. Stir in the remaining ingredients. Chill until ready to use.
  2. Preheat the oven to 220C/430 F. Peel the kohlrabi and cut into wedges. Place them in a bowl and add in chicken schmaltz, spices and rosemary. Toss everything until well combined.
  3. Spread the kohlrabi wedges on a baking tray lined with baking paper, making sure that they do not overlap.
  4. Bake for 15-20 minutes. Turn the kohlrabi fries over and bake for a further 15 minutes. Serve with ranch dressing.

We tend to eat kohlrabi raw, but this looks interesting. I might give it a try in the air fryer.

It might sound strange Angie but I have never eaten kohlrabi before. Just had a chat with hubs and he says he has seen it and that we should put it on our next shopping list to try your recipe. Looks delicious!
