Carrot Salad with Truffle Balsamic Glaze Dressing and Smoked Almonds

It's easy, quick and delicious. The salad goes well with some homemade bread. If you like, use raisins or other dried fruit instead of dried cranberries. It makes a great easy lunch or side with any meat dishes.

 
  • 3-4 Carrots, grated, shredded, shaved or spiralized
  • 1 handful of mint leaves, roughly chopped
  • 50 g Dried cranberries
  • 50 g Smoked almonds, roughly chopped
  • 4 tbsp Extra-virgin olive oil
  • 2 tbsp Truffle balsamic glaze
  • 1 Garlic clove, peeled and finely minced
  • Sea salt
  • Black pepper
  1. Wash the carrots, then using a spiralizer, a peeler or a box grater prepare the carrots and set aside in a large bowl.
  2. Combine the oliveo il, truffle balsamic glaze, garlic, salt and pepper together in a small bowl.
  3. To the bowl with the carrots, add dried cranberries, chopped mint leaves and dressing. Toss everything together. Serve the salad sprinkled with chopped smoked almonds.

I do eat a lot of carrots like a bunny. I actually made a pie with them today, you just grate five or six big carrots, ad some seasonings, garlic, salt, vegeta if you have it, two eggs, a few spoons of oil and them about a cup of corn flour. You mix that together, pour it into a mold, silicone or paper covered and bake for half an hour. In the end it turns thick and compact like a pudding. Very nice for a lunch or dindins.
