Keto Aubergine Balls

These keto aubergine balls are made with a mixture of egg yolks, almond meal, flat parsley, garlic, freshly grated Parmesan cheese and a touch of salt and pepper. They are then coated with ground pork rind and fried in lard until golden and crispy. If you are not on keto, then replace almond meal and pork rind with breadcrumbs. Whether as a starter with a delicious dip or as finger food at a party, or take them to a picnic, these aubergine balls always work!

The combination of juicy sweet cherry tomatoes, unique cilantro, briney olives and baby capers together with a simple but refreshing lemon vinaigrette took the flavour of this seafood salad up a notch. If you like calamari, you will enjoy the meaty octopus too.
Use fresh or frozen octopus. Previously frozen octopus tends to become tender more quickly than fresh. Frozen, pre-cleaned octopus is easier to find over here. If you are buying fresh one, wash and clean it or nicely ask the fishmonger to clean it for you. If desired, grill them briefly for that wonderful smoky flavour and beautiful char before cutting them for the salad.

If you have a high speed blender, use it to make tahini. Otherwise use your food processor. Just keep in mind using a food processor will take lots of time, it took me almost two hours, because I took short breaks in between to prevent my food processor from overheating, and you should scrape down the sides every now and then. You don't have to toast the sesame seeds, but toasting process is what helps the seeds to release their oils, thus making them easier to blend.
Hummus, originating in the Middle East, has been gaining popularity all over the world as this dip is very delicious and versatile. You can make a chorizo hummus bowl, or a hummus using chickpea flour, or cauliflower hummus, or this beautiful pink beet hummus. So here is my new addtion: Black Tahini Hummus. Garnish with your favourite toppings and serve with crackers, pita or crudites. Leftover hummus will keep in an airtight container in the refrigerator for up to 5 days.
Black tahini has a stronger flavour than the traditional white one, so when working with it, you need to add some sweetness to cut through that flavour. For this tahini, I added 2 teaspoons of maple syrup. Use black garlic if you can find them, otherwise, regular garlic works just fine.

Old Amsterdam is a Gouda which has been matured for 18 months. It has a deep yellow colour with a firm, waxy texture and a hint of sweetness. Use Emmentaler or Cheddar instead if desired. You can also try a mixture of different kinds of cheese.
