These rye cookies are soft and gooey in the center, and crunchy around the edges. The dough uses a combination of medium rye flour and plain flour. Rye flour has a nutty, earthy, and characteristic malty taste that brings out the best in ingredients like chocolate, butter and warm spices. The low-gluten of rye gives these cookies a delicate and unique chewy texture that’s hard to beat. It also absorbs more water, making these cookies very moist and tender. Use dark chocolate or other dried fruit if you wish.

An uber-simple salad, this is a spinoff of the classic iceberg wedge with blue cheese dressing. But instead of iceberg, I used romaine hearts. The classic creamy blue cheese dressing gets an upgrade with large crumbles of blue cheese tossed in a pungent vinaigrette. Add some crispy croutons and smoky bacon to the salad if you wish. I used Castello Danish blue, which contains animal rennet, so it is not suitable for vegetarians.

Vindaloo is a tongue tingling kinda spicy Indian curry and can be made with a variety of meats, such as pork, beef, mutton and chicken. You can easily control the degree of spiciness with using fewer chilli peppers. It was originally a Portuguese dish called “carne de vinha d’alhos„ meaning pork with wine and garlic. The dish was brought to Goa by the Portuguese sailors, who stored the meat in the wooden barrels with wine and garlic for long sea voyages and the wine would brine and preserve the meat. Blender Short Grain Rice Bread - free of Psyllium, Xanthan gum, and Starch

Creating bread from rice or rice flour is not a new culinary concept. My mom ususally steamed them after overnight proof using very little yeast or wild yeast. Had it at home all the time, I didn’t and still don’t give a toss about it. So, this is for you, Dezzy. However, using 100% whole raw rice kernels to bake gluten free bread without the help of psyllium, xanthan gum or starch can be a bit tricky and time-consuming than simply using rice flour. The rice batter tends to dry out very easily, that’s part of reasons that rice must be soaked for at least 4 hours, preferably overnight, and esp. if you don’t own a high-speed blender. For a better result, use short grain white rice, but long grain rice could and should work too. The result could be different though. Make one large loaf or several small ones. Top the loaf/loaves with some seeds for different flavours if desired. It’s crusty outside and very soft and tender inside, ideal for sandwiches and for toasting.

Very often just a few ingredients are all that’s needed to make a really flavourful and comforting meal with minimum effort. Get a spoon and dig in! I used canned borlotti beans, making this recipe a total cinch to put together, but broad beans, butter beans or chickpeas would work beautifully. Brownies are the perfect little snack when you're craving something sweet but don't want a big cake. This delicious cake is quick to make, just as quick to vanish and so versatile that you can always try new variations. And who says brownies always have to be brown and made with dark chocolate? Exactly, and that's why I am creating a green version today with Japanese matcha, white chocolate and optional dried cranberries. Japanese matcha gives the baked goods a mild herbal note and the lovely green colour. You can bake them with regular green tea powder, but it doesn't typically produce the vibrant green colour, instead the cake will turn yellowish or dull green. Don’t over bake the brownie. The longer you bake a brownie, the more cake-like and less fudgy it becomes. If the centre of brownie is still sticky and soft, then it is perfect.
