Holes in the shell indicate a worm infestation. If you are not sure, you can put the chestnuts in warm water. If the nuts are fresh, they will sink to the bottom.
The chestnuts develop their nutty-sweet aroma when roasted. Enjoy them plain or with some salt and butter. The chestnut puree is delicious either warm or cold. You can spread it on bread or serve it as a hearty dip with vegetable sticks as a snack or starter! The shell is best removed when the chestnuts are still hot. Make sure that the brown, furry skin is also removed.

Chill the tart until the cream is fully set for easier cutting or put it in the freezer for an hour if you are in a rush. While I have used a 23cm round tart pan, you could use whatever shaped tart pan or even individual-sized ones you have, but keep in mind this may affect the amounts of white chocolate ganache you’ll need.

This warm Middle Eastern eggplant salad on a bed of tahini-yoghurt is great with roasted meat or poultry, especially if they are beautifully charred. Zhoug is a popular Middle Eastern condiment made with fresh cilantro, jalapeños, cumin and garlic. Instead of this spicy cilantro-based sauce, you can also drizzle the roasted eggplants with a little pomegranate molasses. The tahini yoghurt and zhoug can be prepared one day ahead.
