Balsamic Beef Short Ribs with Butter Beans and Sugar Beet Greens

Bone-in beef short ribs braised, low and slow in a mixture of balsamic vinegar, shallots, thyme, beef broth and coconut sugar until they are fall-off-the-bone tender and juicy, perfect for serving atop a Parmesan mashed pumpkin-- a hearty dish that's comforting on a chilly evening. You can also make this in a slow cooker for 4-5 hours at low, then thicken the sauce with a little cornstarch. I served it with a Parmesan mashed pumpkin to keep it low-carb, but you can enjoy it with mashed potatoes, parsnip, or cheesy polenta if carbs ain’t an issue for you. Replace some beef stock with red wine or dark beer if you like.

These red lentil-based deli slices are a game-changer! Packed with protein (though not the complete protein), flavour, and deliciousness, they’re a perfect addition to your plant-based diet, plus they are incredibly budget friendly and also so easy to customize with your favorite spices and seasonings. Instead of paprika paste, you can also try pureeing a small beetroot with lentil for the pinkish colour. Sandwich the cold cuts with some sourdough bread or pan-sear the thicker slabs until golden (just like you do with bologna) and serve them over your favourite salad or simply enjoy them just as they are. Store the rest in an airtight container in the fridge for up to a week or freeze them. I made this plain, but you can add in some chopped olives, pickled green peppers or pistachios before pouring into the pitcher.

Falafel is a dish that, when prepared well, can be exceptionally delicious. Or completely inedible. For me, falafel must be hot and really crispy on the outside, but soft and slightly fluffy within, yet still juicy. The seasoning must also be just right: chickpeas tend to absorb the flavour of their accompanying ingredients, making them really versatile. However, you don’t want to overpowers the delicious flavour of the chickpeas by over-seasoning. The grated butternut pumpkin adds a little sweetness and keeps these little treats from drying out. The falafels can be baked in the oven, airfried, or shallow-fried, but deep-frying proves the best option and creates a crispy exterior while keeping the interior moist. These falafels are delicious, perfect to share, and naturally gluten free. Enjoy them in a salad, stuffed inside pita pocket, or on their own.

These simple herbs loaded fritters, served with an even simpler garlicky yoghurt sauce, are from South-Eastern Turkey. I used chickpea flour to make them gluten free, but you definitely can use plain flour if you have no issues with gluten. Serve them hot while still very crispy, but they are very tasty even warm or cold.

These adorable carrot-shaped flaky pastries are filled with a delectable roasted carrot hummus—they can be filled with herbed cheese or tuna cream if you ain’t into hummus and would make a fun starter or snack.
If you don’t have those cone-shaped moulds, make your own with aluminum foil and baking paper. Cut a regular baking paper into 4 rectangles. Roll up each rectangle into a funnel and secure the baking paper at the sides with a stapler. To make the funnel a little more stable, place a small ball of aluminium foil in the funnel and press the top ends of the baking paper roughly into the funnel.
