These simple herbs loaded fritters, served with an even simpler garlicky yoghurt sauce, are from South-Eastern Turkey. I used chickpea flour to make them gluten free, but you definitely can use plain flour if you have no issues with gluten. Serve them hot while still very crispy, but they are very tasty even warm or cold.

 
FrittersTurkish Garlic & Yoghurt Sauce
  • 8 Spring onions, trimmed and finely chopped
  • 2-5 Garlic cloves, finely chopped
  • 30 g Fresh mint leaves, finely chopped
  • 100 g Flat-leaf parsley with tender stems, finely chopped
  • 1 tsp Pul biber
  • 1 tsp Cumin powder
  • 85 g Chickpea flour
  • 3 Large eggs, beaten
  • Sea salt and freshly milled black pepper, to taste
  • Olive oil, for shallow frying
  • 2 Garlic cloves, peeled
  • ½ tsp Sea salt
  • 150 g Greek yoghurt
  • 1-2 tbsp Extra virgin olive oil
  • Juice of ½ lemon
  • Freshly milled black pepper
  1. For the sauce, using the side of a kitchen knife, crush together the garlic and sea salt into a smooth paste. Combine with the yoghurt, olive oil and lemon juice. Tip into a bowl and add a couple of grinds of black pepper and a little drizzle of olive oil. Cover and chilled until ready for use.
  2. Combine the spring onions, garlic, fresh mint, parsley, pul biber and cumin in a large bowl. Using your hands to combine and rub the mixture to soften them. Add the chickpea flour and stir in the beaten eggs, then season with salt and pepper, and combine well into a batter.
  3. Heat enough oil to cover the base of a large non-stick skillet over a medium–high heat.
  4. Drop tablespoons of the batter mix into the hot oil, spoonful by spoonful, leaving space between each one. Shallow fry for about 2 minutes on each side until golden brown. Remove with a slotted spoon to drain on paper towels. Serve with the prepared yoghurt sauce.

We do love fritters, but minus the mint. I can tolerate mint only in toothpaste LOL They love it for some reason, especially in tea, but I prefer their apple tea. There is sometimes Turkey week in Lidl.
