Bone in, skin on thighs / legs are so much juicier and have more flavour, but it really all comes down to personal preference! If you want to use chicken breast, go for it. Adjust the cooking time accordingly. The sauce used two types of mustards: wholegrain and smooth. So do expect it's full of mustard flavour. I used Maille, but you can use any other quality brands.

It is low-carb, high-protein, full of delicious baby spinach, cream, Parmesan cheese, and of course lots of eggs! Use a terrine if you have one, otherwise, a loaf pan will work just fine. I used a silicone loaf pan and it spread a bit in the middle since the omelette mixture was heavy. You can also make this in a 20cm round cake pan.

To make your chimichurri chicken particularly flavourful, I would recommend that you let the chicken marinate overnight in the fridge. However, if you are short on time or impatient, 30 minutes is minimum.

It turned out so tender and moist. Instead of thyme, you can also use rosemary. The brisket tastes even better the next day because there's more time for the flavors to develop and it gets more tender as it sits. Make this a day or two ahead and refrigerate. Skim off any fat before reheating, covered, in the oven or on top of the stove.

Cuchifrito with Whole Lemon Salsa Verde
Monday, September 23, 2024Cuchifrito or cochifritos, literally means fried pig, refers to foods in Spanish and Puerto Rican that are usually pork based and fried. In Spain, it means fried pork (usually suckling pig), but in Puerto Rico, it’s used for almost anything fried. They are commnely served with tropical juice or cold beer. Remove the excess liquid from pork belly after baking them. If you don’t get most of the moisture off the meat, it will cause the oil to pop and create a huge mess. I baked the pork belly the night before and let them dry overnight in the fridge. This will make them even more crispy. The salsa can be prepared a day ahead.
