Fresh, crispy and sweet snow peas are really ideal for a quick stirfry. You can also add protein (chicken, prawn, egg or tempeh) to this simple dish. It's easy to prepare and ready within 15 minutes. Just simply shred the trimmed snow peas and toss with chilli and ginger for maximum flavour and crunch.
Snow peas, aka Chinese pea pods, are young and flat with very small peas inside (different from rounded snap peas) and typically available all year-round, but the peak season is spring through early winter. As their name implies, snow peas can survive frost and snow.

Served with a simple blanched bok choy (and steamed rice if desired) for a perfect weekend meal. Mirin is a Japanese sweet rice wine made for cooking. If you don't have mirin on hand, use a sweet marsala wine or Sherry. Another alternative is to use rice wine vinegar, but keep in mind to cut the amount called for in half and then add some sugar (1 teaspoon for every tablespoon of rice wine vinegar) to replicate the sweetness of mirin.

Rendang is a popular dish made with meat (usually beef but sometimes chicken or mutton) stewed in coconut milk and spices such as ginger, chilli, galangal, lemongrass, garlic, shallot or/and onion, kaffir lime leaves and turmeric. It is believed to originate from West Sumatra, Indonesia, by the Minangkabau people, the dish is commonly found in Indonesia, Malaysia and Singapore. It is usually served with rice and steamed greens. You can add some toasted desiccated coconut flakes to help thicken the sauce if you prefer it an even drier stew.
