Made with healthy and wholesome ingredients, this easy, quick oatmeal casserole recipe comes together instraight in the baking dish. Top the oatmeal with other seasonal fruit if figs are not in season. If you prefer a more solid to gooey baked oatmeal, bake slightly longer. You can enjoy this either warm or cold for breakfast or as a dessert with some whipped cream or a scoop of ice cream.

- 3 Ripe bananas, mashed
- 3 Medium eggs
- 500 ml Milk
- 250 g Rolled oats
- 75 g Ground walnuts (or hazelnuts or almonds)
- 1 tsp Baking powder
- 1 tsp Ground cinnamon
- 1 tsp Pure vanilla powder
- ¼ tsp Fine sea salt
- 6 Figs, cut into wedges
- 80 g Dark chocolate chips

- Preheat the oven to 180C/350F.
- Peel the bananas and place them in a 22-24cm casserole dish. Mash them with a fork. Add the eggs and milk and stir everything together. Add the rolled oats, nuts, baking powder, cinnamon, vanilla powder and sea salt, and mix everything together.
- Wash the figs, then cut into 4 or 6 wedges if large. Top the oat mixture with figs, sprinkle with chocolate chips and bake in the middle of hot oven for about 40 minutes until the center just set. If you prefer a drier and more solid oatmeal casserole, bake 5-10 minutes longer.
- Remove from the oven and cool for 5-10 minutes. Spoon or slice the casserole and serve drizzled with maple syrup or honey if desired. Keep the baked oatmeal in the refrigerator for about a week.
