Sunflower Whole Spelt Bread

A hearty and nutritious loaf of homemade spelt sandwich bread dotted with roasted sunflower seeds, which gives it a nutty taste and unique texture. The bread uses a mix of white and whole spelt flour, along with a significant amount of sunflower seeds. It’s perfect for lunch or toasted with butter and honey for breakfast. 

 
  • 365 ml Lukewarm water
  • 1 tbsp Molasses
  • 1 package / 7 g Active dry yeast
  • 250 g Wholemeal spelt flour
  • 250 g Spelt bread flour
  • ¾ tsp Sea salt
  • 2 tbsp Olive oil
  • 100 g Toasted unsalted sunflower seeds plus extra for form and topping
  • 1 Egg white
  1. Dissolve molasses in lukewarm water in the bowl of your mixer and sprinkle dry yeast over the top. Let yeast activate until it forms a creamy layer on top of the water, about 5 minutes.
  2. Add in spelt flours and stir with a dough hook until everything comes together, then add the sunflower seeds, salt and olive oil, knead until it forms a smooth, elastic ball that pulls away from the sides of the bowl.
  3. Cover the dough with a clean kitchen towel and leave in a warm place for the dough to double in size, which will take about an hour.
  4. Brush a 25x11x10 loaf pan with a little olive oil and sprinkle the bottom and sides with sunflower seeds.
  5. Turn out the dough onto a lightly oiled work surface and roll out the dough into a rectangle, about 22x35cm, and from 22cm-side roll it up and pinch ends together. Place it into the prepared loaf pan.
  6. Allow the bread rise, covered, for 45-60 minutes or until the dough has filled the whole loaf pan. Brush the top with egg white and sprinkle some more sunflower seeds on top.
  7. Preheat the oven to 200C/400F. Bake the bread in the middle of hot oven for 40-45 minutes. Allow bread to cool in the pan for 5 minutes before turning out on a baking rack to cool completely.
