This simple salad balances sweet juicy blood oranges with peppery arugula and salty marinated feta. Serve alongside quinoa or couscous, roasted chicken or steak. The marinated feta can be prepared the night before, covered and kept chilled until ready to use.
Marinated Feta | Salad |
- 1 x 150 g Feta, cubed
- Finely grated zest of 1 lemon (save the lemon juice for the vinaigrette)
- 1 tsp Nigella seeds
- 1 tsp Chilli flakes
- 1 tsp Dried mint or dried oregano
- 4 tbsp Extra-virgin olive oil
|
- 3 Blood oranges
- 50 g Arugula leaves
- A handful of basil leaves, torn or chopped parsley
- Juice of 1 lemon
- Juice of 1 blood orange
|
- Start by marinating the feta. Cube the feta and place them in a small bowl, add the lemon zest, spices and herbs, then pour over the olive oil. Toss gently to coat. Set aside for at least an hour for the flavours to infuse. Cover and transfer to the fridge if marinating for longer.
- Segment the oranges by topping and tailing, then sit on a board, bottom down. Use a small, serrated knife to cut away all of the peel and pith in strips, then cut and release the orange segments from the membrane.
- Arrange the arugula on a large serving plate with the blood orange and basil. Drain the feta through a sieve into a bowl (reserving the oil) and scatter the feta cubes over the salad.
- Whisk together the lemon juice, orange juice and reserved feta oil. Drizzle all over the salad just before serving.

So pretty and yummy!
Impressive fetta and more. Great how you use those blood oranges, too.
Interesting flavors and the blood oranges are always look impressive.
We eat feta cheese all the time but I have never had it marinated. A new taste experience awaits me.
This salad looks and sounds delicious!
Take care, have a great day!
I do love blut orangen but we never have them here, sadly. Most of our tropical fruit is shitty here, cannot remember when was the last time I ate a tasty banana, for example. You did a lovely match with the gray plate.
Las ensaladas con frutas y queso son mis preferidas, con naranja me gustan mucho, aunque la naranja sanguina la consumo menos, rica está igualmente.
...this is a color and taste explosion.
che meraviglia buonissima!
Wow, what a flavor combination! Oranges, chili's, mint, basil, oregano...it must fairly burst in the mouth! Nice one, Angie.
What a stunning salad! Blood oranges are so pretty.

Hi Angie, Can't eat the greens (except for iceberg lettuce) but I do love feta cheese and blood oranges. Take Care, Big Daddy Dave

I love the idea of adding oranges. It's such a delicious fruit. And today I made your rye, chocolate and sour cherry bread. It came out great. Thanks for sharing your recipe Angie.
Which reminds me - I have not done marinated feta for a while now. They are super great for salads.

this looks so tasty Angie. I love blood oranges and fetta. Interesting that you use the word arugula instead of rocket for this green leaf. I can't even pronounce arugula - hehehehe ...
cheers

How beautiful! I actually have everything on hand with the exception of the Nigella seeds. I am not familiar with those at all.
This salad sounds like such a refreshing and vibrant dish! The combo of sweet blood oranges, peppery arugula, and salty marinated feta is just perfect, it’s got all the flavors working together so well
