Poppy Seed Cake with Pistachios

A light and tender spelt poppy seed cake bursting with orange flavour that will keep you coming back for another slice. Topped with a thick orange glaze and salted, roasted pistachios, this buttery and seedy cake is perfect for the ultimate treat alongside a cuppa.

  • 125 g Butter, softened
  • 150 g Erythritol or regular sugar
  • 1/2 tsp Pure vanilla powder
  • 1 Pinch of salt
  • 4 Eggs, medium
  • 180 g White spelt flour
  • 30 g Potato starch
  • 1 tsp Baking powder
  • 30 g Poppy seeds
  • 220 ml Orange juice
  • 100 g Icing sugar, sifting
  • 100 g Salted, roasted pistachios, shelled and coarsely chopped
  1. Line a 20-22cm loaf pan with parchment paper. Preheat the oven to 180C/350F.
  2. Place the butter, erythritol or sugar, vanilla powder and salt in a bowl. Use a hand mixer to beat until light and creamy. Stir in one egg at a time and continue mixing until the mixture is lighter in colour. Add in the flour, potato starch, baking powder and poppy seeds and stir into the mixture.
  3. Scrape the batter into the prepared pan. Remove from the oven and prick the cake with a wooden skewer. Pour 200 ml of orange juice over the warm cake. Lift the cake from the pan and parchment paper, and leave to cool on a wire rack.
  4. Mix the icing sugar and remaining orange juice to make a thick glaze, spread over the cake, sprinkle with pistachios, leave to dry.
