Double Hemp Cookies with White Chocolate and Macadamias

These hemp cookies are soft, chewy and loaded with white chocolate and macadamias. Hemp seeds, aka hemp hearts, are a complete protein in the plant world, meaning that they provide all nine essential amino acids that your body needs but cannot produce. Both the seeds and the oil are rich in essential fatty acids. The hemp oil derives from the seeds of the Cannabis sativa plant (while CBD oil uses the stalks, leaves, and flowers of the hemp plant), so they do not contain cannabidiol (or just trace amounts), but still have a rich profile of nutrients and omega-3. So you will not feel the “high” while enjoying these cookies.

 

  • 50 g Macadamias, toasted (or blanched hazelnuts)
  • 220 g White spelt flour
  • 1 tsp Baking powder
  • 100 g White chocolate chips
  • 40 g Hemp hearts
  • 60 g Coconut sugar
  • 100 g Xylitol (or caster sugar)
  • 1 tsp Vanilla extract
  • 140 ml Hemp seed oil
  • 1 Large egg, beaten
  • Sea salt flakes, to finish
  1. Preheat the oven to 180C/350F. Line 2 baking sheets with baking paper and set one aside.
  2. Tip the nuts onto one of the baking sheets and pop in the oven for 4-5 minutes until golden. Leave to cool slightly then chop roughly.
  3. Sift the flour, baking powder and a good pinch of salt into a large mixing bowl. Stir through the chocolate chips, hemp seeds and nuts. Add both sugars to a separate bowl, make a well in the centre and add the vanilla, hemp oil and the egg. Whisk together until smooth.
  4. Pour the wet ingredients into the dry, and mix until just combined. You should have a fairly soft, sticky dough. Either leave the dough, covered, to rest overnight in the fridge or if baking immediately, scoop tablespoons of the mixture onto both trays, spacing well apart to allow the mixture to spread. Top each cookie with a tiny pinch of flaky salt. You will have 22-24 cookies.
  5. Bake for 12-14 minutes, until golden but still soft. Leave on the tray for 10 minutes to firm up slightly before transferring to a cooling rack.

I don't eat vegetarian so I haven't heard about using hemp in cooking. I wonder how it tastes, but with those good ingredients in your cookies, you probably don't even notice any hemp taste. Or do you?
