These ain't your average oatmeal cookies. They are made with less sugar, perfectly spiced and chewy, and topped with fanned-out fig slices. These are the less guilty delicious treats you'd be proud to take to any potluck. I prefer to bake with spelt flour, but you can definitely use regular plain flour.
Fresh Fig Oat Cookies

- Heat the oven to 180C/350F. Line a large baking tray with parchment paper.
- Tip the softened butter, coconut sugar and xylitol crystals into a bowl, and use electric beaters to whisk until the mixture is light and fluffy. Add the spelt flour, oats, spices, baking powder, baking soda and sea salt, and mix together. Add the cream or milk.
- Take each fig half and use a sharp knife to cut thin slices along the length from the stalk end, but not all the way from the top, so that the slices stay together and can be fanned out.
- Roll the cookies into balls, put onto the prepared baking tray, then flatten each top slightly so it’s large enough for a fig half to fit. Put the fig halves, cut-side up, onto each cookie. Bake for 15 minutes or until browned at the edges. Remove and cool slightly before removing them. Dust with icing sugar if using.

These are very pretty. I've only seen fig cookies with a fig jam inside the cookie. These are definitely more attractive.
