These bliss balls or energy bites take the flavours of a traditional carrot cake and turns it into a healthy pick-me-ups. They are natually sweetened with dates and pineapples and coated with desiccated coconut or anything you like. Chia, hemp or poppy seeds are all great for the coating. They really are the perfect little snack to keep stored in a container in the fridge for whenever you need something easy and healthy to eat.

- Process carrot, date, pineapple, oats, almond butter, rum or pineapple juice and spices in a food processor until almost smooth and well combined.
- Roll the mixture into balls. Roll in coconut to coat. Place on a lined tray in fridge for 1 hour or until set. Store in an airtight container in fridge for up to 1 week.

...creative and beautiful.
Sounds and looks interesting. Rum in them would be good too - we make rum balls at Christmas time down here. Well some of us do.
Wow, great idea, and love the addition of dried pineapple one of my favorite dried fruits. have to give this a try once we head back to some normalcy. hope things are ok over there
Bocconcini golosissimi, uno tira l'altro!!!
Angie I love this recipe. I make a wonderful carrot cake but it’s got quite a bit of sugar in it. Plus sometimes we just don’t want to overindulge and that’s hard to avoid even with a thin slice. I absolutely love your healthy version. I’m going to get those ingredients today and whip this up to have for an after dinner treat. I can’t wait to try them. .
Wow! Very interesting carrot balls. Looks yummy.
This sounds like a fantastic treat especially if you are counting calories. Thanks Angie.

Hello It seems like "cezerye", a Turkish sweet or candy , carrot preserve with pistache or hazelnut assortiments and coated with coconuts. It s usually sliced like "doner" leaves.
They look nice bites :)
All the best Jan
This is my kind of afternoon pick me up, Angie! Love all of the warmly spiced flavors and how easy these are to make!

Who could resist a bite or two of carrot cake for a burst of energy? A great bite of total goodness.
A great 'pick-me-up' recipe. (Except I would be tempted to make it unhealthy by dipping the balls in some cream cheese icing)!

Me parecen una exquisitez en pequeñas raciones. Me encanta la carrot cake y cuando la he visto en bolitas me ha gustado aún más. Una presentación excelente.

Love the flavors in these bliss balls, Angie!
Interesting! Carrots are sweet, and dried pineapple is supersweet ... I think it's cool that you don't need to add any sugar to these treats.
I love carrot cake and know I would love these carrot balls too! Anything with coconut gets my attention :)
Dates, carrots and pineapples, definitely that's bliss on every bite
