The combination of tomatoes, kiwi and crisp fried capers might sound odd, but it worked like a charm. I use a mix of dark coloured heirloom tomato and regular grape and cherry tomatoes, but any quality tomatoes will work just as fine. Feel free to throw in some avocado for an extra boost of potassium. The salad is light, fresh and full of flavour. Serve it as an appetizer or as an accompaniment to meat.

- Drain the brined capers, rinse and pat dry with a paper towel. Heat avocado oil in a small saucepan or skillet over medium-high heat. When the oil is hot, add in capers and fry, swirling the pan gently, until golden brown. Using a slotted spoon, transfer the capers to a plate lined with paper towels to drain. Set aside to cool briefly before using.
- Place the sliced tomato, lime juice, sea salt and black pepper in a large bowl and gently toss to combine. Arrange tomatoes and kiwi on a large patter and divide into two plates.
- Sprinkle crispy capers over the salad. Top with chopped tarragon and drizzle with olive oil to serve.

That dark tomato looks so lovely. Sadly, we only get some nasty plastic tomato here because they import the horrid ones instead of serving us our beautiful, fragrant domestic tomatoes. I've read somewhere that while they were trying to genetically enhance the resistance and shape of the tomatoes, the producers lost its taste gene and that is why it tastes like plastic these days. When I was a kid we had a farm and my fave was yellow tomato.
@DEZMOND The tomatoes here are not better. For good tomatoes, I actually had to pay almost twice as much. A sad reality...I used to grow my own tomatoes..smaller, the taste was much more intensive and had a sour tang sweet taste. My husband can't really tell the difference and I don't eat salads or veggies..so I don't bother any more.

This is such an unusual combination, at least from what I’m accustomed to, but it sounds delicious. I love the idea of crispy capers. I like capers a lot, but I’ve never had them any way other than straight from the jar. I’m going to try this.

this is such an interesting and unusual and colourful salad angie! and so pretty. i had to laugh when i saw it had 2 kiwi! they are flightless birds as you would know, or folk from NZ. from my point of view (and probably most aussies and Kiwis - the people not the birds) you have to say kiwi fruit. i've never really understood why people would leave out the important word. sorry i'm being pedantic. just ignore me!

A really unusual combination of flavours, and whilst I am not altogether sure about adding the capers, I would definitely include the avocado, which is one of my favourites.
