These Mediterranean-style cheese-stuffed bites are a clean, delicious and nutty after-dinner treat or snack for family and guests. They are quick and simple to make. Filled with magical Italian Mascarpone flavoured with thyme and chilli for extra flavour and a subtle spicy kick, enhanced by sweet honey and raw pistachios. It's just what you need to satisfy that sweet tooth. Besides mascarpone, goat cheese, labneh, or blue cheese are all fantastic for the recipe. You can also fill them with nut or seed butter if you want to avoid dairy.

  • 150 g Mascarpone
  • 1/4 tsp Pink salt
  • 1 Large pinch of chilli flakes
  • 1 tsp Fresh thyme leave
  • 250 g Medjool dates (9-12 dates)
  • Pistachos, chopped
  • Honey, to serve
  • Thyme leaves, to garnish
  1. Stir the mascarpone, pink salt and chilli flakes in a bowl until smooth. Fold in fresh thyme leaves.
  2. Use a small sharp knife to cut a slit in each date. Remove and discard the stones. Spoon 1 heaped teaspoon of the mascarpone mixture into each date.
  3. Place the dates on a serving platter and sprinkle with some chopped pistachios. Drizzle the honey over and garnish with thyme leaves.

Ooo what a beautiful idea. I love stuffed dates (But I think I've only done this with walnuts and almonds), but the addition of pistachios is definitely right up my alley. With decadent mascarpone and pistachios, you've elevated a simple dessert to a new and more elegant level!

I love it!...I make them at home in a similar way you make them. Instead of chili flakes, I use cardamom....I have to try them with chili flakes!!....Abrazotes, Marcela

Angie, Pretty exotic...but sounds great. I think I'd like these stuffed dates with the goat cheese or blue cheese too. Stay Safe and Take Care, Big Daddy Dave

OMG! This dish has my name written all over it - I love every ingredient you have in this recipe and that honey glaze is something I would never have thought of adding!

I might exchange the mascarpone for one of the blue cheeses and the pistachios for walnuts, which also work great with stuffed dates.

Looks good enough to eat :)

Aww, stuffed dates! I love these. Usually I just fill the dates with some nut butter, like pistachio and that's just perfect for me.

That sounds so delicious and I especially liked that addition of red chili flakes. It must have provided a lovely balance of flavours.

I love it when I see stuffed dates on a menu when we're out to dinner (which hasn't been a lot in the past year). The mascarpone and pistachio combination sounds so good and I am definitely a date lover. ♥
