I love salsa in every season and this nutrient dense autumn favorite makes a beautifully balanced and tasty pumpkin salsa, featuring roasted diced Hokkaido pumpkin, red onions and dried cranberries.

I will happily devour this salsa any season I love pumpkin and I don't know why people refuse to eat it before October. I will happily eat it 12 months a year!

I can't thank you enough for making two people with opposite taste preferences, HAPPY, HAPPY, HAPPY! xo Roz

Unusual combination of flavours, very pleasant to the eye and taste buds.
Stunning and mouth watering as usual. :-)
It feels like fall already and I am sure we'll be seeing more pumpkin. The combination in this recipe sounds wonderful. What do you serve it with?
What a terrific idea! I think of salsas made with summer fruits, but pumpkin is a wonderful way to move salsas into autumn :)

Love everything here except the word autumn, to early;-) Seriously very original and delish looking salsa.
Hi Angie, back again...this time staying in touch and hopefully coming up with new posts! Love, love, your amazing Pumpkin/Cranberry salsa. Pumpkin always pairs so nicely with cranberries. I still have a bag of fresh cranberries in my freezer from last December...got to get more creative and do something with that.
There certainly is no season for pumpkin which is so underrated for the rest of the year...other than in the fall and winter! The raspberry vinaigrette is an added plus to this amazing and delicious salsa! xo
What a beauty about this recipe - down to the ingredients and color! Perfect for some pumpkin cheer!
Very creative use of pumpkin. Did you post your homemade raspberry vinegar? I cannot find it.
What a colourful and delicious salsa, sweet pumpkin with tart cranberries sounds perfect :D
Cheers

Aah ...I love pumpkin. This is beautiful, Angie! It looks like a great summer treat :D
this looks like the best salsa ever! I love the flavors of the tart cranberry alongside the rich pumpkin. You could put this on anything!
Such a beautiful salsa! Using pumpkin is a delicious idea!
Angie your pictures are breathtaking! I love salsa of all types and love your unique combo of pumpkin and cherry - so much color! And love the texture of the mustard seeds in it too!
Mmmm, I love Hokkiado pumpkins, they are hard to find though! I had a vegan bourguignon of portobellos, seitan, parsnips, chestnuts, prunes and carrots in a herb-infused burgundy wine sauce served in a roasted Hokkiado pumpkin (in Paris) and it was pretty delicious! The salsa you made looks absolutely stunning!
Different combo, pumpkin and cranberries, very colorful and tempting salsa..
What a great combination of flavors and textures.
This looks gorgeous - the colors! You're making me look forward to Fall.
What a fabulous recipe idea. This lovely recipe would be perfect during the holiday season, complimented with turkey! Gorgeous, Hugs, Terra
Pretty! And I like the little bowls! I went to market the other day but I can not find Hokkaido pumpkin. I guess I have substitute with ordinary pumpkin.

Although I am not yet ready to think about pumpkins and squash, I know they are out there and soon we will be staring autumn in the face :) What a delicious and beautiful way to say 'welcome' to Fall!

I love salsa sauce... This one should be delicious as salsa on the mexican restaurant...
Thanks for the sharing
What a great dish for fall.
oh boy, the pumpkin recipes are coming out already in August -- lol! That's okay, this one is pretty wonderful so we won't complain too much ;-) -- beautiful recipe Angie.
oh! i' ve never heard of raspberry vinegar! this is completely insane! thank u so much for the recipe!
Angie you have made me start craving the fall. This is great for a party.
Beautiful, Angie, I love the colors. I went back and looked at your raspberry vinegar recipe, that would be a good one to make since raspberry vinegar is hard to find. Vinegar essence doesn't seem to be sold in the US (except ordering it from Europe through Amazon, or perhaps in a specialty grocery) so I'd have to figure it out another way. The only vinegar I've made on my own is sage vinegar, and I just steeped the sage leaves in ordinary vinegar.
