Pumpkin and Cranberry Salsa

I love salsa in every season and this nutrient dense autumn favorite makes a beautifully balanced and tasty pumpkin salsa, featuring roasted diced Hokkaido pumpkin, red onions and dried cranberries.

Pumpkin and Cranberry Salsa

adapted from Taste
  • 600 g Hokkaido pumpkin, finely chopped
  • Olive oil
  • 2 tsp Mustard seeds
  • 1 Red onion, finely chopped
  • 40 g Dried cranberries
  • 2-3 tbsp Homemade raspberry vinegar
  • 2 tbsp Walnut oil
  • 2 tbsp Finely chopped parsley
  1. Preheat oven to 220C/410F. Arrange chopped pumpkin in a single layer on a large baking tray. Drizzle with some olive oil and bake for 20 minutes until tender.
  2. Place mustard seeds in a skillet over medium-high heat. Cook for 2 minutes or until seeds begin to pop.
  3. Combine mustard seeds, red onion, dried cranberries, raspberry vinegar and olive oil in a bowl. Stand for 20 minutes to let flavours develop.
  4. Place pumpkin in a large bowl. Add cranberry mixture and chopped parsley. Stir gently to combine.

This is beautiful- I would never think to put pumpkin in a salsa, but I guess there is so much more that can be done with a salsa, rather than just the traditional kind. I love this!

Hi Angie, back again...this time staying in touch and hopefully coming up with new posts! Love, love, your amazing Pumpkin/Cranberry salsa. Pumpkin always pairs so nicely with cranberries. I still have a bag of fresh cranberries in my freezer from last December...got to get more creative and do something with that.

There certainly is no season for pumpkin which is so underrated for the rest of the year...other than in the fall and winter! The raspberry vinaigrette is an added plus to this amazing and delicious salsa! xo

Mmmm, I love Hokkiado pumpkins, they are hard to find though! I had a vegan bourguignon of portobellos, seitan, parsnips, chestnuts, prunes and carrots in a herb-infused burgundy wine sauce served in a roasted Hokkiado pumpkin (in Paris) and it was pretty delicious! The salsa you made looks absolutely stunning!

Beautiful, Angie, I love the colors. I went back and looked at your raspberry vinegar recipe, that would be a good one to make since raspberry vinegar is hard to find. Vinegar essence doesn't seem to be sold in the US (except ordering it from Europe through Amazon, or perhaps in a specialty grocery) so I'd have to figure it out another way. The only vinegar I've made on my own is sage vinegar, and I just steeped the sage leaves in ordinary vinegar.
