- Peel and finely grate parsley root and carrot with a mandolin. Arrange Belgian endive leaves in a salad bowl. Place the grated vegetables in the center. Scatter the mung bean sprouts and pomegranate seeds over.
- Add the olive oil, vinegar and salt and pepper to taste and toss gently the grated vegetables, mung bean sprouts, pomegranate seeds together.

Parsley root is light beige, shaped like a carrot. Farmers here even call them white carrot. It's different from celery root, but very much like a parsnip.

A beautiful and sunny looking salad. First time I head of Mung bean sprouts was from a vegan boyfriend. I have seen the popularity grow since then. But I have yet to actually try any.

When I was attending a holistic health college, there was a study on sprouts. It was a lot of fun. Since then, I had completely forgotten it until I read your post. The salad looks delicious. I'll have to try making my own sprouts again. They taste terrific and are so cheap to make.

I remember growing my own sprout for school projects when I was very young! ha...didn't think of using that for a great recipe like this. I think it's time for me to show my kids how to grow some sprouts. ;)
