High Protein Bread

A healthy, hearty, nutty quick bread with high-protein nuts, seeds, egg whites and cheese. It's perfect for breakfast or snack. If you can’t find Quark, a soured-milk, fresh German cheese, ricotta cheese or Greek yogurt can be used as a substitute in this quick bread recipe.

High Protein Bread

adapted from Lecker
  • 100 g Ground almond
  • 100 g Flaxseed, roughly ground
  • 4 tbsp Wheat bran
  • 2 tbsp Wholegrain spelt flour
  • 1 tbsp Baking powder
  • 1 tsp Salt
  • 300 g German quark cheese
  • 8 Egg whites
  • 2 tbsp Pumpkin seeds
  • 2 tbsp Sunflower seeds
  1. Whisk together the ground almond, flaxseed, wheat bran, spelt flour, baking powder and salt. Add in fresh German cheese and egg whites. Mix until combined and smooth.
  2. Line a 10x30-cm loaf pan with a piece of parchment paper and fill in the bread batter. Sprinkle the top with seeds. Bake at 175C/350F for about 50-60 minutes. Turn out onto a wire rack to cool.

Whole Foods makes Seduction Rolls that look just like this that I love. I'm wondering if this tastes the same. This loaf is beautiful and so healthy. I'm going to definitely try it.

I like that you use real food ingredients (not protein powder) to achieve a higher protein content in this loaf. Hearty and delicious looking too - your ingredient list is fabulous Angie.

@KitcheninspirationsNo problem at all. But you can use mix 90% of ricotta and 10% of sour cream to create a very similar tangy taste.

I looked at this post yesterday but must have gotten distracted before commenting. This bread reminds me of my favorite organic loaf from our grocery store - called Marathon Bread. When people come to visit I buy them a loaf to take home. How excited I am to have a recipe to try that looks so similar in texture and ingredients. Thanks Angie!

Your baking is always so beautiful, Angie...your bread being no exception! I love all the seeds and the quark and wheat bran in this loaf. BTW..your poolish rolls inspired me.,.AND 3 of my friends, and we all made some form of them a few weeks ago. I added a ton of seeds to mine. Thank you for giving me the motivation to bake some breads again! I will surely try this one!

This is a high protein bread! Aside from the grains and seeds, there is the cheese and egg whites. I have no idea what quark cheese it, so that goodness for Google. :) Another fabulous bread Angie! The texture looks amazing!

Angie, I've missed you, your blog, and of course all the delicious breads and healthy treats you've been making. Love, love, this amazing healthy, high protein, high fiber super delicious bread. All the grains and seeds will give you enough energy throughout the entire day...just with one slice of bread in the morning. Sure has a lot of egg whites as well, for extra protein!
