The maize tortilla is somewhat thicker and heartier in texture, while the wheat version is less easily broken, due to its elevated gluten content. Recipe adapted from this Mexican Cookbook

- 240 g German #550 flour
- 1 tsp Salt
- 1 tsp Baking powder
- 2 tsp Salad oil
- 180 ml Water at 45C/110F
- In a mixing bowl whisk together flour, salt, and baking powder. Add in salad oil till the mixture resembles cornmeal. Pour in water and mix till dough can be gathered into a ball. Place it on a lightly floured board and knead for 2 minutes until the dough has become smooth and soft. Cover it with a plastic wrap and let rest for 15 minutes.
- Divide the dough into 9 even portions. Cover and set aside for a further 20 minutes. Dust the work surface with flour. Pat each of dough into a circle and roll out the tortilla, working from the center out, until you have an 8-inch tortilla.
- Heat up a skillet until very hot. Place in the tortilla and cook until it begins to blister. Allow it cook for 20 seconds, flip and let the other side cook for another 20 seconds. Once they are done it should have lots of nice brown speckles. Remove the tortilla and wrap it in a napkin. Repeat until all tortillas are cooked.

The tortilla looks fabulous!The only thing that is different about this from Indian Roti is the baking powder. I don't use it when I make Rotis on a daily basis. Perfect rounds of joy, i should say.Love the colorful topping!

Is there a difference in is this flour u are using , I have always seen different levels of flour , especially in making breads and pasta.

Angie, I am totally impressed. You made your own tortillas. Wow! Just recently I traveled through Texas which has a large Mexican population along its borders. I stopped a local mexican diner and ordered the most authentic tacos made with fresh tortillas-it was wonderful.
I didn't know you could make tortillas with flour. These are what we call "pita bread" but the only difference is that we bake them in the oven. Next time shall try your method.

Angie darling, couple of months ago, I bought a package of spinach tortillas and did not really know what to do with them, just bought them because they looked lovely. On Saturday, I made my son breakfast and since he had to run and was late, I wrapped the eggs and sausage with tomato in the tortilla and off he went. Later he called to tell me it was the best breakfast he ever had. So now I buy them regularly, I might venture out and make my own now. Have a lovely weekend my friend.

I love Mexican food! I love having tortillas wrapped around a filling of sour cream, salsa, onions, tomatoes and etc.! Sounds so Tex-Mex, right! Oh, that cookbook! My American mom has that, too! That was when I made my first tortillas with her with recipe from that book! Yours look so professionally made!
