This cool, crisp delish is really easy to make and it tastes so delightful and delicious! A perfect accompaniment to the coming summer grilling season.
- 300-350 g Cucumber, sliced
- 50 g Carrot
- 1 tsp Salt
- 1 tbsp Honey
- 1 tsp Brown sugar (preferable rock sugar)
- 3 tbsp White vinegar (preferable white rice vinegar)
- 2-3 Pickled pepperoncini
- 2-3 clove Garlic, sliced
- Thinly peel the carrot and cut the pickled chilli into small pieces. Rinse and slice cucumber. Place cucumber slices in a bowl together with peeled carrot and sprinkle salt over. Let stand for 2 hours.
- Drain, rinse well with cold water and drain again. Transfer cucumber and peeled carrots to a glass jar. Combine together honey, brown sugar, white vinegar, sliced garlic and pickled pepperoni in a bowl. Pour over the cucumber. Seal the jar and shake to mix. Marinate it in a fridge for 1 day. Sprinkle with sesame seeds if desired and serve.

Oooh...my favourite. I love this...very refreshing and appetising. I had just made some last week but with pineapple. It's great when eating curry. I love that you added carrots. It adds to the colour.

This is something that my mom will prepared for us especially during festive season. This goes well with roast meat and other heavy dishes. Thanks for the idea. Is time to make some :)
The local version is called Acar Rampai, with additional onions and sometimes fresh pineapples :)

I love the close up! I turned on some friends in Texas to this side dish and now I hear the husband eats at the place often just to have some- lol, she does not cook often, so unless I make it for them, I will try and send her this post so she can see your beautiful dish, and maybe she will try!
You're right, the grilling season is coming again... I can imagine that this cucumber salad would taste good with any BBQ meat. Do you grill often?

I haven't seen pickled pepperoni here in the US. Are you talking about the pepperoni (Italian cured sausage) that we use for pizza topping?
Tuty: They are the pickled green chillies.
