German meatloaf (Falscher Hase or Hackbraten in German) is a traditional German pork and beef meatloaf bound with boiled eggs, a real hearty comfort food. After WW II, falscher Hase rising to prominence as meat was still scarce but the housewives wanted to give the family a special treat, so they wrapped the ground meat (usually beef and pork) with boiled eggs and flavoured the meatloaf with parsley, mustard, and paprika. I have left out the hard-boiled eggs and bacon in this recipe.
Serve them with Sauerkraut, German bread dumplings or mashed potatoes and sour cream based sauce.

- Thoroughly mix ground meats, onion, bread crumbs, cold water, and eggs. Preheat the oven to 200C7400F.
- Season the mixture with salt, paprika, mustard, and parsley. Blend ingredients thoroughly and shape into a loaf.
- Place the loaf in a baking pan and bake in a preheated oven for about 45 minutes. While meat is baking, gradually pour hot beef broth over the top of the meatloaf and basting occasionally. Serve with German bread dumplings.

hv made meatloaf once b4, i probably put too much balsamic vinegar in it. it didnt work really well.

That's an excellent meatloaf, love the recipe and can't wait to try! My grandma used to make a meatloaf (or rather a meat roll) with an omelette inside, then we ate it sliced & cold with mayo.

Wish I'm a guest in your house right now. The meatloaf looks so succulent & goooodddddd!! The broth poured over it makes this a winner as whenever I see meatloaf, it is always the dry version.

My host mother in Hungary always made something like this, but with minced pork and minced turkey. She even put boiled eggs inside so when you slice the meat loaf, you can see the cross section of the boiled eggs.
I'm so ignorant...I always thought meatloaf was a purely American thing! D'oh!

I made this recipe last night doubling the recipe except the salt. It was absolutely delicious and my husband that spent 5 1/2 yrs in Germany in the US Army thought it tasted like we were in Germany. He loved it, both hot and cold. Thank you for sharing this fabulous recipe. Deserves a 5+++ star.
