Butterhead Lettuce Salad with Burrata and Caper Dressing

With creamy burrata cheese, crunchy homemade croutons or toasted walnuts, and briney caper dressing, this butterhead lettuce salad is a lovely balance of flavours and textures. The simplest, best salad you'll eat! You can use other types of lettuce or a mix of greens, like arugula, mâche or baby spinach. To enhance even more flavour and textue, throw in some crispy bacon bits to your salad.

 
Caper Dressing
  • 2 slice Sourdough bread, cubed
  • 1 tbsp Butter
  • Walnuts, toasted (optional)
  • 1 Large butterhead lettuce
  • 1 tbsp Parsley, chopped
  • 2x100 g Burrata
  • 2 Shallots
  • 1 tsp Dijon mustard
  • 1/2 tsp Pul biber
  • 40 ml White wine vinegar
  • 120 ml Avocado oil (or olive oil or a mix of two)
  • Sea salt and black pepper
  • 1 glass / 35 g Capers
  1. Dice the bread. Heat the butter in a pan. Add in the bread cubes and fry for 3-5 minutes over a high heat until crispy. Remove.
  2. Cut the lettuce into individual leaves, wash and spin dry. Stack the leaves on plates to form salad bouquets.
  3. Peel and finely dice the shallots. Mix with the mustard, pul biber and vinegar and gradually whisk in oil until well combined. Season with salt and pepper and add in the capers.
  4. Cut the burrata balls in half and place on the salads. Spread the vinaigrette on top and sprinkle chopped parsley and the croutons or toasted walnuts over.
