Chilled Radish Soup

A few easy ingredients and this radish soup comes together quickly. Unpeeled cherry radishes are blended with buttermilk to create a light, yet creamy soup with a delicate pink blush. The spiciness and pungency of radishes is tempered by tangy buttermilk and rich crème fraîche. The soup turned out absolutely delightful. I used round "Cherry Belle", but the elongated "French Breakfast" is just as good. Serve this nourishing and wonderfully refreshing soup cold like a raw tomato gazpacho in summer for grilling and barbecue.

  • 300 g Radishes (I used round "Cherry Belle")
  • 250 ml Well-shaken and chilled buttermilk
  • 1/2 Lemon, zest and juice
  • 80 g Crème fraîche
  • 1 tsp Agave syrup
  • 1 tsp Smooth Dijon mustard
  • 1 tsp Extra-virgin olive oil
  • Salt and pepper
  • Fresh herbs, to garnish
  1. Wash and clean radishes. Reserve 2 for the topping and thinly slice them. Set aside. Cut the rest into quarters. Place the quartered radishes in the cup of your immersion blender together with buttermilk. Blend until smooth.
  2. Add in lemon zest, juice, crème fraîche, agave syrup, Dijon mustard, and olive oil. Stir to mix well. Season with salt and pepper.
  3. Refrigerate the soup for several hours until well chilled. Divide the chilled soup between 2 bowls. Garnish the soups with reserved sliced radishes and herbs. Drizzle a little bit of olive oil over if desired.

this sounds marvellous for a summer night's dinner angie. i have learned to love radishes in my old age :-) I think buttermilk would give it a great flavour.

It is nice that you don't have to cook it, especially now that we are under this unholy heat wave, I'm just about to die from it. I'm cooking just 15 to 20 minutes meals this week to avoid hell in kitchen.

This sounds delicious, especially for a summer night's dinner. I tried this Chilled Radish Soup for the first time. My children and I like them very much. I think chilled buttermilk would give it a fantastic flavour.

I love some good chilled soup (Sometimes it's the only thing, along with watermelons, you can eat during the heatwaves.) I use radishes often as the addition to gazpacho or my favourite beet cold soup; however, I've never used them as the star ingredient. This looks and sounds utterly delicious and refreshing!

I made chilled pea soup before, but never used radishes in soups as far as I can remember, so this is really interesting. I will try a vegan version of this. xx

I always have millions of radishes in the fridge because I own two African giant snails and they eat radish leaves. Then I must eat the radishes lol. So it has been useful for me and I will try this recipe :-)

How much does this make? I would love to make this, but since my husband isn't a radish fan, it would be just for me who loves radish. From the looks of the recipe I would guess about 2 cups or 500 ml?
