This quick and flavourful chicken recipe is truly a crowd pleasers. For a richer flavour, bone-in, skin-on chicken thighs, drumsticks or whole legs are the perfect choice for the recipe. However, the real star of this dish is that creamy cheesy Comté sauce, which is enriched with double cream, and homemade chicken broth, and distinct Comté offers a rich, robust flavour and complex textures to boot. Serve with your favourite crusty bread or pasta to mop up the luscious sauce.
Comté cheese comes from the Jura mountains in France. Its deep nutty flavour with sweet and fruity undertone is the perfect balance to the richness of chicken and caramelized onions.

Blender Short Grain Rice Bread - free of Psyllium, Xanthan gum, and Starch

Creating bread from rice or rice flour is not a new culinary concept. My mom ususally steamed them after overnight proof using very little yeast or wild yeast. Had it at home all the time, I didn’t and still don’t give a toss about it. So, this is for you, Dezzy. However, using 100% whole raw rice kernels to bake gluten free bread without the help of psyllium, xanthan gum or starch can be a bit tricky and time-consuming than simply using rice flour. The rice batter tends to dry out very easily, that’s part of reasons that rice must be soaked for at least 4 hours, preferably overnight, and esp. if you don’t own a high-speed blender. For a better result, use short grain white rice, but long grain rice could and should work too. The result could be different though. Make one large loaf or several small ones. Top the loaf/loaves with some seeds for different flavours if desired. It’s crusty outside and very soft and tender inside, ideal for sandwiches and for toasting.

Very often just a few ingredients are all that’s needed to make a really flavourful and comforting meal with minimum effort. Get a spoon and dig in! I used canned borlotti beans, making this recipe a total cinch to put together, but broad beans, butter beans or chickpeas would work beautifully. If desired, add a tablespoon of honey to make it sweet and spicy. Serve with a steaming bowl of saffron scented rice or crusty bread for an even more substantial meal.

Brownies are the perfect little snack when you're craving something sweet but don't want a big cake. This delicious cake is quick to make, just as quick to vanish and so versatile that you can always try new variations. And who says brownies always have to be brown and made with dark chocolate? Exactly, and that's why I am creating a green version today with Japanese matcha, white chocolate and optional dried cranberries. Japanese matcha gives the baked goods a mild herbal note and the lovely green colour. You can bake them with regular green tea powder, but it doesn't typically produce the vibrant green colour, instead the cake will turn yellowish or dull green. Don’t over bake the brownie. The longer you bake a brownie, the more cake-like and less fudgy it becomes. If the centre of brownie is still sticky and soft, then it is perfect.

Soft, delicate breads are crowd-pleasers, and this bread, thanks to the purple sweet potato and chicken schmaltz added to the dough, is incredibly tender, fluffy and chewy. I used purple sweet potato, but you can also use other types of sweet potato. The amount of flour could vary slightly depending on the type of flour you're using and the moisture in your sweet potatoes, so check out your dough consistency and feel free to add a bit more flour or water if your dough turns out too dry or too wet. That being said, it’s better to work with a sticky dough than a dry one as liquid is what make your bread tender and soft. I have added a tablespoon of aronia powder with a good source of antioxidants for the health benefits, but it’s completely optional.

Puddingbrezel, Puddingteilchen, or Vanilleplunder is a sweet pretzel variant enormously popular in Germany, especially in the Rhineland. The Danish pastry is twisted into a pretzel and then filled with plenty of homemade vanilla pudding and crumbled raspberries. Feel free to use other types of fruit. After baking, it is glazed with apricot jam, just like from the bakery. Or maybe even better than from the bakery. Enjoy them as a snack, breakfast or serve them as a side dish with coffee.
Danish pastry is made from yeast leavened dough, so it’s slightly different from the yeast-free puff pastry. The key step in the production process is to incorporate the butter into the dough by folding it in and repeatedly folding and rolling it out. This process forms countless thin layers that rise during baking and create a crispy, airy structure. It is a bit more time-consuming, but I promise you, it's so worth it.

Easy and perfectly juicy roasted chicken with tangy white beans combined with lemon and dill for a warming and hearty high protein dinner that the whole family will love. While any white bean with or without mirepoix will do, I prefer cannellini, aka white kidney beans, to navy beans or pea beans.
