These chocolate truffles combine two favorite decadent ingredients – roasted salted macadamia nuts and white chocolate. Vanilla helps to enhance and balance the flavours of the white chocolate and macadamia nuts. It’s rich, creamy and delicious, and the contrast between the nutty saltiness of macadamia nuts to the sweetness of the creamy white chocolate truffle is totally irresistible. These are perfect for Valentine’s Day, Mother's Day or gifting to someone special.
Sweet, fruity with a peppery flavour, pink peppercorns, aka Schinus Berries, are either Peruvian Pepper (Schinus molle) or Brazilian Pepper (Schinus terebinthifolius). Both are very similar in flavour profile. They are actually not peppercorns at all and are not even related to the pepper nigrum plant. Pink peppercorns have a delicate, fragrant, sweet, and spicy flavour. They are reminiscent of a mild citrus zest and sweet berries. They are used to add a touch of both colour and flavour to many dishes, especially well in fruit sauces, in vinaigrette, desserts, fresh cheeses and chocolate, also ideal for soups, risottos and fish dishes.

Pan Seared Steak with Creamy Long Pepper Sauce

A quick, creamy peppercorn sauce is the perfect accompaniment to steak, chicken, mushrooms, or even potatoes. Add a couple of tablespoons of brandy to the sauce for the extra flavour if desired. I used distinctive long pepper here, but regular black peppercorns work just as great. Another great alternative for the sauce would be bourbon smoked peppercorns, that would add some amazing smoky aroma and flavour.
Long pepper is a close relative of black pepper. As opposed to the small spheres of black pepper, the long pepper is 2-4cm long and conical, with tightly-clustered peppercorns. In India the long pepper is sometimes used in combination with other herbs in Ayurvedic medicine.
It has a sharp, warm and sweet flavour of liquorice and dark chocolate. It is sharper and more intense than traditional black pepper. Alongside the peppery spiciness, this amazing pepper delivers a taste similar to that of mixed spice thanks to the subtle hints of nutmeg, cinnamon, and cardamom. Long pepper can be used as whole, crushed in a mortar and pestle, or broken into pieces and put in a spice grinder. In sauces, broths or marinades, it can develop its slightly sweet flower scent. But with increasing cooking time, the sharpness increases too.
There are two types long pepper, India's piper longum, and piper retrofactum, which grows in Indonesia and tends to be cheaper and easier to find. It's not a common ingredient outside of India and southeast Asia, but it can be found online and in Asian markets.

Vitamin C rich, sweet snow peas add flavour and texture to many dishes, from quick stir-fries to salads and soups. Snow peas can be eaten raw or cooked. However, blanching snow peas will reduce the fibrousness of the edges of snow peas, and boost sweetness and brighten colour. Ready in 20 minutes, this is a light yet flavourful dinner you won't be able to resist.
Tellicherry and regular black pepper come from the same vine, but they are larger than regular black peppercorns. Unlike other black peppers, the Tellicherry is not immature but ripely picked. That's why Tellicherry peppercorns are more pungent and provide an increased complex flavor with added woodsy and citrus notes. It is considered one of the best pepper varieties in the world. Use these peppercorns to season meats, poultry, seafood, sauces, vegetables and desserts.

Baked Belgian Endive with Tomato Passata

Belgian endives are the star of this simple yet divine dish. They are delicate in texture and pleasantly bitter with sweet and nutty undertones. They can be enjoyed raw where they taste crisp and slightly bitter. They are also delicious cooked, either boiled, braised or baked, where their sharp flavour softens into a mellow, nutty sweetness. No rinsing or washing necessary as it will make it more bitter tasting. Just pull off and discard outer leaves or use a damp cloth to wipe the outer leaves and trim the base.
Tomato passata is an uncooked tomato puree made with very ripe red tomatoes that have been strained from seeds and skins. They are usually sold in glass jars or bottles. Sometimes it comes with basil but nothing more. If you can't find it, just use marinara / pasta sauce instead.

By ‘smacking’ the cucumbers in this refreshing side dish you create more rough surfaces to better soak up the spicy sauce. It makes a great accompaniment to grilled chicken or skewered steak. Feel free to use more chilli sauce if you want it really spicy or less chilli oil if you prefer it milder. Whipped tahini is creamy, nutty, richly satiating and comes together in a snap using a stick blender.

The delicate, sweet persimmon and juicy, tangy mandarins with creamy burrata, pomegranate seeds and fresh mint. All drizzled with olive oil then sprinkled with a generous amount of sumac, cracked PGI Kampot pepper and smoked salt. Wonderful colours and textures combined to create this zestful, flavourful and lively winter salad.
PGI (Protected Geographical Indication) Kampot (a city in southern Cambodia) pepper with a beautiful red colour offers sweet notes of citrus fruit, berries, dates, and honey. The hot taste also has slight flavours of eucalyptus and mint. Freshly ground or crushed, it perfumes your salads, baked goods and roasted vegetables. Kampot peppercorns are considered the finest pepper in the world. They’re named after their region of production.
Sumac, or sumach, comes from the Arabic “summaq,” which means “dark red.” It's made from the berry fruit of the Rhus Coriaria shrub and adds a citrusy tangy lemony flavour to salads and meats. It's tart and sharp, but also contains a hint of sweetness, along with lingering floral notes.

Bitter endives, distinctly citrusy kumquats, sweet and sour pomegranate and briny Feta form the basis of this salad full of intense flavours. A fabulous salad or light lunch. Besides Feta, the endives pairs really well with blue cheese too.
The bitter substances in Belgian endives stimulate the production of bile in the liver and digestion, especially of fats. They also prevent cravings by curbing the appetite.

Buttery, flaky smoked trout prepared in this manner is a wonderful variation of tartare. Crème fraîche, wasabi paste and lemon juice is mixed with fresh smoked trout and top with a fruity salsa made avocado, mango, red onion and chives.
