Gözleme with Minced Beef, Pointed Pepper and Spinach

Fancy trying something new? Then why not give this Turkish Gözleme with beef mince, spinach and pointed peppers a go? It’s super easy to make at home with just a few ingredients. Just mix a simple dough without any leavening agents, fill it, fold, seal and panfry in a pan. It is perfect for breakfast or brunch. Fuss free, delicious and keeps well in the fridge. Serve it warm with a side salad or just some lemon wedges.
Gözleme is a type of Turkish stuffed flatbread, like pide and lahmacun, with different fillings such as spinach and cheese, potatoes or minced meat. There’s something for everyone.

 
DoughFilling
  • 400 g Plain flour
  • 60 ml Olive oil
  • 200 ml Water
  • ½ tsp Sea salted
  • 1 tbsp Olive oil plus more to cook
  • 400 g Minced beef
  • 2 Red onions, peeled and finely chopped
  • 2 Garlic cloves, peeled and finely chopped
  • 150 g Pointed pepper, chopped
  • 100 g Baby spinach
  • 1 tsp Cumin powder
  • 1 tsp Cayenne pepper
  • 1 tsp Paprika powder
  • Sea salt and black pepper
  1. To make the dough, sift the flour into a bowl. Add the olive oil, water and salt and knead everything with the dough hooks attachment of a hand mixer or food processor for about 10-12 minutes until you have an elastic and smooth dough.
  2. Turn out the dough on your work surface, then knead the dough briefly with your hands and shape it into a ball. Cover the dough with a clean kitchen towel and leave it to rest while you prepare the filling.
  3. Fry the minced beef in a pan with a tablespoon of olive oil until crumbly.
  4. Peel the onions and garlic. Wash the peppers, remove the stalks and seeds, and finely chop everything. Then add to the minced beef and fry for a few mintues. Season with cumin, paprika, cayenne pepper, salt and pepper.
  5. Wash and spin dry the baby spinach thoroughly. Turn off the heat and add spinach to the pan and mix until they are wilted. Allow to cool slightly.
  6. Divide the dough into 4-6 even portions. Lightly flour a work surface and roll out one piece into a large circle until nice and thin. Lay 1/4 or 1/6 of the filling on half of the dough circle, leaving a 2 cm around the edges. Then fold over and press the edges together with a fork. Repeat with the remaining pieces of dough and filling.
  7. Heat a large frying pan until hot. Brush one side of gözleme with some olive oil and carefully lift it into the pan, with oil side down. Cook for 3-5 minutes until golden and crispy. Brush with some oil, then flip, and cook for another 3-5 minute until golden brown and crispy. Transfer to a plate or board. Repeat with the remaining gözleme, half them and serve hot.
