This fruity avocado salad with mango tastes simply delicious. Chilli rounds off the whole thing with a spicy note and the rice crackers provide the crunchy effect. If you want to use some homemade croutons, then cut the 2-3 slices of wholegrain bread into 1 cm cubes and dry toast them in a skillet until golden and crunchy. Remove and toss with a tablespoon of olive oil.

Carob Miso Vinaigrette
  • 150 g Baby salad leaves
  • 200 g Ripe mango, cut into 1 cm cubes
  • 1 Avocado, cut into 1 cm cubes
  • 1 tbsp Finely chopped mint
  • Mini rice crackers (or bread or croutons)
  • 35 ml Freshly squeezed orange juice
  • 5 tbsp Freshly squeezed lemon juice
  • 1 tbsp tahini
  • 1 tbsp Carob syrup

  • 1 tsp White miso paste (made from soya and rice)
  • 1 Small red chilli pepper, deseeded and finely dice
  • 2 tbsp Extra virgin olive oil
  • Sea salt and black pepper from the mill
  1. Wash and spin dry the baby salad leaves. Peel the mango, avocado and cut each into 1 cm cubes.
  2. To make the dressing, place all the ingredients, except olive oil, in a glass or bowl and mix well with a whisk. Then drizzle in olive oil and continue stirring until well combined. Season with salt and pepper to taste.
  3. Toss baby salad leaves, diced mango and avocado and chopped mint to the dressing and serve the the salad garnished with the rice cracker or croutons. Or arrange separately in a large bowl and mix at the table.

Mango and avocado salad seems like a gift from the gods, but given the price of both ingredients very expensive!

This looks like a tasty winter salad. Well anytime of year but for some reason fruits like mangoes, lemons and oranges always taste better in the winter. Have a great start to the new week Angie.
