A comforting, lukewarm casserole made with stale bread, blueberries, cream, milk and eggs is a brunch attraction. Ideal for using up the bread from the day before. I used German Brötchen, but French baugette would be great too. Other than blueberries, you can use any other berries, cherries or raisins. If using frozen blueberries, mix in without thawing to avoid discoloring the mixture. The bread pudding is fantastic with the rich, silky vanilla sauce, but would also be amazing served with vanilla ice cream or simply homemade whipped cream.

- Preheat the oven to 180C/350F. Grease a standard casserole with a bit of butter. Mix the cream, milk, eggs, raw sugar, vanilla extract and salt in a bowl.
- Cut the bread into bite-sized cubes and mix with the cream mixture. Add in 2/3 of the blueberries. Spread everything into the prepared casserole dish.
- Bake in the middle of the oven for about 25-30 minutes. Remove the bake and leave to cool on a rack briefly. Serve with the remaining berries and vanilla sauce.
- While the bread pudding bakes, prepare the vanilla sauce. In a small bowl, combine the cornstarch with two tablespoon of milk. Mix until it's thoroughly smooth. Place the remaining milk into a saucepan and bring it to a boil.
- In a small bowl, mix together the egg yolks, sugar and vanilla extract until smooth and add some warm milk.
- As soon as the milk boils, remove from the heat and whisk in the cornstarch mixture. Bring to a simmer until it thickens. Remove from heat and stir in the egg yolk mixture.

Bread pudding was always a staple in my Grans house to use up any leftover bread. Those were the days before preservatives were put into bread so fresh bread only lasted a day or two. I loved bread pudding and I love this version!
