Bread Pudding with Blueberries and German Vanilla Sauce

A comforting, lukewarm casserole made with stale bread, blueberries, cream, milk and eggs is a brunch attraction. Ideal for using up the bread from the day before. I used German Brötchen, but French baugette would be great too. Other than blueberries, you can use any other berries, cherries or raisins. If using frozen blueberries, mix in without thawing to avoid discoloring the mixture. The bread pudding is fantastic with the rich, silky vanilla sauce, but would also be amazing served with vanilla ice cream or simply homemade whipped cream.

Bread PuddingGerman Vanilla Sauce
  • 250 g Stale bread (I used German Brötchen), cut into bite-sized cubes
  • 200 ml Cream
  • 100 ml Whole milk
  • 2 Eggs
  • 50 g Raw cane sugar
  • 1 tsp Dr. Oetker vanilla extract
  • 1 prise Salt
  • 250 g Blueberries, fresh (don't thaw if using frozen)
  • 500 ml Whole milk
  • 2 tbsp Cornstarch
  • 2 Egg yolks
  • 30 g Sugar
  • 1-2 tsp Dr. Oetker vanilla extract
  1. Preheat the oven to 180C/350F. Grease a standard casserole with a bit of butter. Mix the cream, milk, eggs, raw sugar, vanilla extract and salt in a bowl.
  2. Cut the bread into bite-sized cubes and mix with the cream mixture. Add in 2/3 of the blueberries. Spread everything into the prepared casserole dish.
  3. Bake in the middle of the oven for about 25-30 minutes. Remove the bake and leave to cool on a rack briefly. Serve with the remaining berries and vanilla sauce.
  4. While the bread pudding bakes, prepare the vanilla sauce. In a small bowl, combine the cornstarch with two tablespoon of milk. Mix until it's thoroughly smooth. Place the remaining milk into a saucepan and bring it to a boil.
  5. In a small bowl, mix together the egg yolks, sugar and vanilla extract until smooth and add some warm milk.
  6. As soon as the milk boils, remove from the heat and whisk in the cornstarch mixture. Bring to a simmer until it thickens. Remove from heat and stir in the egg yolk mixture.

Wow . . . does that ever look tasty, not only that but, that's something I could really sink my gums into, seeing I don't have teeth.

My MIL loved bread pudding, it’s such a good way to utilize stale bread. The blueberries look delicious too and thank you for the great tip on using them frozen to avoid discolouration.

BTW, just want to say we've just posted our last blog post. I've thoroughly enjoyed your blog, and I'll still be visiting. But we've got a lot of activities lined up that will be occupying my time, so my visits will be much more sporadic in the future. Best wishes to you!

Bread pudding was always a staple in my Grans house to use up any leftover bread. Those were the days before preservatives were put into bread so fresh bread only lasted a day or two. I loved bread pudding and I love this version!

Angie, you have another winner here! I love bread pudding, but the addition of blueberries would really take it over the top! The vanilla sauce sounds delicious as well. My grandmother used to make the absolute best vanilla sauce ever! Pattie @ Olla-Podrida
