White Bean, Cevapcici and Tomato Salad

White bean, cevapcici and tomato salad is a simple but tasty food that is very quick and easy to prepare and bursting with flavours. It is perfect for a lunch or supper with your family. Cevapcici (aka Cevapi) is a type of casing-less, finger-sized sausage from the Balkans and southeastern Europe. I made white beans from the scratch with Instant Pot. It's cheaper, healthier and more flavourful, but a canned variety works just fine too. The cooking time can vary depending on the variety of white bean and quantity you're using. Instead of cevapcici, you can use shrimp or tuna for the salad too.

DressingSalad
  • 1 tbsp Red wine vinegar
  • 1 Garlic clove, finely chopped
  • 1 tsp Dijon mustard
  • Pinch of sugar
  • Pink salt and black pepper
  • 60 ml Extra virgin olive oil
  • 250 g Dried white beans
  • 750 ml Water
  • 1/2 tsp Sea salt
  • 1 tbsp Olive oil
  • 1 Garlic clove
  • 1 Bay leaf
  • 200 g Cooked cevapcici leftover, sliced
  • 125 g Grape tomatoes, halved
  • A handful of baby salad leaves or mixed herbs (such as tarragon, parsley and arugula)
  1. Whisk vinegar with garlic, mustard and sugar, then season with pink salt and black pepper. Gradually whisk in olive oil until emulsified and thick.
  2. Combine white beans, water, salt, 1/2 tablespoon olive oil, garlic and bay leaf in your instant pot. Lock the lid, and turn the valve to sealing. Select 'pressure cook' and cook for 12 minutes. Once cooking is complete, let the pressure release naturally on its own. Strain and set aside.
  3. Heat a skillet over medium heat. Add in the remaining 1/2 tablespoon of oil and brown the sliced cevapcici on both sides. Turn off the heat and add beans to the skillet with half the dressing, gently toss to warm through, then transfer to a large serving platter.
  4. Add in tomatoes and herbs and gently toss to combine. Serve with remaining dressing.

Thank you for this recipe:) We love white beans but the two ladies in our house are not keen on the balkan dried sausage which our neighbor gave us! ...and I didn't know what best way to use this either. Your recipe seems to be the wonderful solution:) Grateful for the inspiration:)

What a lovely salad, really bright flavours and colours. This dish reminded me of our early travels through Europe, I think we were in Germany or Austria and we were nearing the end of our vacation. In those days, restaurants served mainly meat and potatoes and although I enjoy meat, I don’t like to eat it every day. I remember ordering a salad (in those days we didn’t have Google translate and the menus were in German and it came with some kind of stewed beef!

I love it!....I will make it with vegetarian sausages...it reminds me a dish that I used to eat in my childhood....and I love instant pot too....it is great friend in my kitchen for legumes and everything!.....Abrazotes, Marcela

I have to admit that I have never come across cevapcici before, or cooked with white beans, so this would be a real 'shot in the dark' meal for me to make!

I checked out the sausage and that sounds quite nicely spiced, however the white beans just look and sound a bit tasteless and I'm not sure that hubbie wouldn't turn his nose up at them. Perhaps I'll buy some and just add a few to a meal to see if he notices :)

Cevapi or cevapcici are actually one of our national dishes here in Serbia LOL I don't eat them, of course, as a vegetarian, but they are immensely popular both among the people and tourists. They've no connection with sausage, though and are usually very small, finger sized. I bet you have a Balkan restaurant or shop somewhere near you :)

There is a Serbian restaurant that we like that serves delicious cevapcici. Before going there I had never heard of it before. I love home cooked beans far better than the canned ones too. What a heart and delicious salad!
