Beluga Lentil Zottarella Salad with Fresh Turmeric Vinaigrette

Labels: { , , , } | © 2016 |

Tiny, black and round with a rich earthy flavour and chewy texture, beluga lentils are named for the caviar they resemble. They hold their shape and firm texture when cooked, making them a good choice for salads. You can easily replace them with French green lentils. Fresh turmeric is the star in this anti-inflammatory dressing that adds incredible flavour and texture to this comforting salad.

Fresh Turmeric VinaigretteSalad
  • 100 ml Olive oil
  • 2-inch Fresh turmeric, peeled and grated
  • 1 tbsp Maple syrup
  • Juice of 1 lemon
  • 3 tbsp White balsamic vinegar
  • 2 Garlic cloves, minced
  • 1 tsp Black pepper, ground
  • 1/2 tsp Sea salt
  • 200 g Beluga black lentils, rinsed
  • 150 g Zottarella minis
  • 120 g Baby spinach
  • 1-2 Peaches, stoned and sliced
  • Basil and parsley
  1. To make the dressing, combine all the ingredients in a jar and shake until well combined. Chill until ready for use.
  2. Fill a medium pot with 700 ml water and bring it to a boil. Add in rinsed black lentils and simmer for 12-15 minutes or until tender but still firm. Drain immediately through a fine strainer and rinse briefly with cool water. Drain again, set aside and allow to cool.
  3. In a large bowl, toss the cooled lentils with half of the dressing. Add the zottarella minis, peaches, parsley and basil and toss briefly. Divide the spinach leaves on two serving plates and spoon the lentil salad over. Serve with the additional dressing. | © 2016 | | © 2016 |

Eva Taylor 27/6/16 16:53

What a gorgeous salad Angie, I just love all of the textures. And the Zottarella minis look like they would add an amazing texture. We call these minis bocconcini (unripened, soft mozzarella in cocktail sized balls)

Wow! it looks like caviar! But probably better. So nice Angie!

mjskit 29/6/16 04:04

As usual, you make a gorgeous salad!!! Have never heard of those lentils, but I bet I can find them at my local co-op which has a huge selection of lentils in bulk. Even if I can't find the lentils, I have to make that vinaigrette. A friend gave me a bottle of Honey Ginger White balsamic that would be great here, I believe. Thanks for another beautiful salad Angie!

Dannii @ Hungry Healthy Happy 29/6/16 12:20

We are big fans of adding protein to our salads for a nice little protein boost. This looks lovely and colourful.

Unknown 29/6/16 19:32

such a refreshing salad Angie, love it!

Rahul 29/6/16 22:33

What a vibrant salad, Angie. Looks so fresh and inviting.

tigerfish 30/6/16 05:47

Been cooking with red lentils quite recently (and regularly) because it cooks faster than the black or green lentils. But for this salad, the firmer textured lentils will work better.

Jean | 30/6/16 15:49

Angie, I love lentils and this salad looks perfect! I have never heard of fresh turmeric -- must see if I can get my hands on some.

Karen (Back Road Journal) 1/7/16 20:26

What a pretty salad. While I've never seem the Beluga lentils, I have two packages of the French green ones in my panty. There is a produce stand in the next town over from where I live that has the fresh turmeric so this recipe is doable.

chow and chatter 3/7/16 05:34

looks wonderful and healthy

Jeanette | Jeanette's Healthy Living 4/7/16 21:18

I love the black lentils and zottarella - I've never heard of the term zottarella - is it mini mozzarella balls?

Emma @ Bake Then Eat 6/7/16 08:37

What a perfect salad for a summer evening, tasty and healthy :D

Smitha 6/7/16 20:15

This recipe and flavor is completely new to me. Will try sometime

Choclette 10/7/16 11:05

I've a jar of beluga lentils which is rather neglected and forlorn. Using them in salads is a great idea. Getting hold of fresh turmeric in our neck of the woods is problematic, but I buy it whenever I come across it - fabulous stuff.

Sharon D. 12/7/16 01:56

I've not heard of these lentils - definitely will look out for it. Thanks to you, I now have an idea how to use some of the lesser known ingredients found in our organic food supermarkets ;)

Smitha 26/7/16 16:36

Salad again. Lovely. i like salads very much.

Marcelle 29/7/16 17:49

I finally tried lentils for the first time, Angie and I loved them. This salad is calling my name. Nice summer recipe! :)
