Tiny, black and round with a rich earthy flavour and chewy texture, beluga lentils are named for the caviar they resemble. They hold their shape and firm texture when cooked, making them a good choice for salads. You can easily replace them with French green lentils. Fresh turmeric is the star in this anti-inflammatory dressing that adds incredible flavour and texture to this comforting salad.

- To make the dressing, combine all the ingredients in a jar and shake until well combined. Chill until ready for use.
- Fill a medium pot with 700 ml water and bring it to a boil. Add in rinsed black lentils and simmer for 12-15 minutes or until tender but still firm. Drain immediately through a fine strainer and rinse briefly with cool water. Drain again, set aside and allow to cool.
- In a large bowl, toss the cooled lentils with half of the dressing. Add the zottarella minis, peaches, parsley and basil and toss briefly. Divide the spinach leaves on two serving plates and spoon the lentil salad over. Serve with the additional dressing.

What a gorgeous salad Angie, I just love all of the textures. And the Zottarella minis look like they would add an amazing texture. We call these minis bocconcini (unripened, soft mozzarella in cocktail sized balls)

Been cooking with red lentils quite recently (and regularly) because it cooks faster than the black or green lentils. But for this salad, the firmer textured lentils will work better.

What a pretty salad. While I've never seem the Beluga lentils, I have two packages of the French green ones in my panty. There is a produce stand in the next town over from where I live that has the fresh turmeric so this recipe is doable.

I've a jar of beluga lentils which is rather neglected and forlorn. Using them in salads is a great idea. Getting hold of fresh turmeric in our neck of the woods is problematic, but I buy it whenever I come across it - fabulous stuff.
I've not heard of these lentils - definitely will look out for it. Thanks to you, I now have an idea how to use some of the lesser known ingredients found in our organic food supermarkets ;)
