Quinoa, Chickpea and Strawberry Salad with Sundried Tomato Vinaigrette

This delicious quinoa salad with chickpea, strawberries, and cucumber along with a sundried tomato dressing is short on gluten but not on taste, and packed full of healthy goodness. It can be enjoyed at room temperature or chilled, which makes it a great choice for picnics, potlucks, and packed lunches!

SaladSundried Tomato Vinaigrette
  • 120 g A mix of white and red quinoa
  • 360 ml Water
  • 200 g Chickpea in can, rinsed, drained
  • 1 Small cucumber, diced
  • 200 g Fresh strawberries, quartered
  • 10 Sundried tomato halves
  • 1-2 tbsp Fresh Parmesan, grated
  • 2 Garlic cloves
  • 30 ml Balsamic vinegar
  • 20 ml Red wine vinegar
  • 2 stalk Spring onions, chopped
  • 100 ml Olive oil
  1. Rinse quinoa in a fine sieve until water runs clear, drain and transfer to a medium saucepan. Add water and bring to a boil over high heat. Reduce heat to low. Simmer for 10 to 15 minutes or until water has absorbed. Set aside to cool and fluff with a fork.
  2. Blend all the vinaigrette ingredients together, adding the olive oil last until you get the desired consistency.
  3. Place the quinoa, diced cucumber, chickpeas, and quartered strawberries in a large bowl. Add in dressing and toss to combine.

What a delightfully healthy and beautiful salad Angie and I must say I LOVE that basket of strawberries, so cute. Hey Angie! I made this delicious lunch as dinner for us two. We loved it too! It was so light & refreshing! My dressing was way darker than yours maybe because of the darker looking sundried tomato halves! :) Next time, we will eat it with grilled fish on the side! ;) xxx

This is truly cool. It is looking quite colorful. One fabulous point over here is all the three main ingredients used in the recipe are of great nutritional values. Strawberries are rich in vitamins like c,b5,b6 . They give you great looking skin too. Chick peas are my favorite and i love eating them they maintain proper blood sugar levels. And "Quinoa" you don't even believe what wonders it could make. It is called as the "Super Food". A perfect recipe to be tasted my everyone......... :)

Thanks for this wonderful recipe. I couldn't locate the black Venus Rice :( However, I subbied with wild rice. I've cooked the rice, and will prepare the rest tomorrow, and shall have this for dinner, but I think I will eat it heated being winter here, so thanks for a great site, and such easy, and beautiful interesting recipes...
