- Bring the vegetable stock to a boil. Turn the heat off and ad in the bulgur. Let soak for 15 minutes.
- Peel and finely dice the shallot and garlic clove. Cook in 1 tablespoon of olive oil in a small saucepan over medium heat, stirring occasionally, and season with salt, pepper, and cumin powder.
- Season yogurt with salt and pepper. Fold in chopped lemon balm leaves.
- Stir together the soaked bulgur, eggs, prepared shallots, garlic, and breadcrumb. Season to taste. Form the mixture into 16 patties. In a large skillet, heat the rest of olive oil over medium-low. Cook patties until browned and firm, 5 to 6 minutes per side. Serve with lemon balm yogurt.

Angie, you have so may uses for Bulgur Wheat...just incredible. Absolutely loving these awesome patties. I keep mentioning that I will make something different with my bulgur and lucky for me, I have all the ingredients on hand. The only thing I will not be able to get is the lemon balm leaves, so I will substitute it for grated lemon and perhaps some lemon juice?
So yummy! love the clicks and the presentation, would love to try it ;)
I have had bean or various peas patties but never bulgur. Sounds really interesting. The flavors are spot on too, love it.
Oh Yumm!! Love the look of these and could easily enjoy a plateful :) Delicious and healthy!
What a great twist to "veggie" burgers. I'll have to give these a try as they seem to be a nod to the lentil patties I had a few weeks ago. I enjoyed those and I just know I'll love these!
Yum, Angie! Bulgur is so underrated! I love this idea and, as always, your execution is flawless. Lemon balm yogurt - oh la la!

Beautiful photos! I've not seen bulgur in my local supermarkets before, hopefully I can chance upon them so I can try this delicious-looking recipe!
My mom always grew lemon balm--I remember it taking over the yard! She never did anything with it though (although as a kid, I loved rubbing the leaves between my fingers and smelling them!), so it never occurred to me to cook with them. I bet the sauce is so fragrant!
These are really nice I enjoy meatless patties. You make them look so special! Thanks!
What a lovely recipe, Angie! That flavorful yogurt sounds like the perfect topping!

How fantastic - perhaps I'm a bit biased being a Middle Eastern blogger and all, but I do love the regional flavors here. We love bulghur but admittedly I rarely shape it into patties. You've inspired me to bring that habit back into our kitchen! Just lovely.
I love bulgur! These look so yummy :).
